BBQ Pork Pizza

When you have leftover barbecued pork from the huge Boston Butt you cooked, you could use it to make sandwiches, but then again you could make an incredible Barbecue Pork Pizza that resembles the sandwich on a whole other level!

This recipe was partly found and partly created. It’s the perfect mix of BBQ sandwich flavors in a pizza crust, complete with pickles!

Crock Pot Fried Apples

Fried apples – soft, sweet, and perfect for breakfast or supper. One of my favorite comfort foods at home and at Cracker Barrel is Pinto Beans (you can find the copy cat Cracker Barrel Beans here), fried potatoes, and fried apples. But I also love to have cooked apples with eggs and a biscuit!

My husband recently invited all our church deacons for breakfast and my menu included Hash Brown Bake, French Breakfast Puffs , Pecan Pie Muffins and Fried Apples. I needed quite a lot of apples for the group, so I wanted to cook them in the crock pot so I wouldn’t have to fuss over them on the stove. This method was so simple and absolutely delicious! They tasted every bit as good as Cracker Barrel’s!

Balsamic Cherry Tomatoes

Our tomato vines are still going STRONG! I can’t stand to see them go to waste, so I searched for a recipe so I could make the best use of these late bloomers. This is a variation of another recipe we love that uses roasted tomatoes and ravioli. You can find that recipe here. The recipe I’m sharing today is VERY close to that recipe. The one difference is that this makes up a bit of a chunky sauce poured over spaghetti. I know this…both are delicious and a fantastic way to use up those cherry tomatoes! I halved this recipe and it gave us supper for two nights. It was delicious!’

You could cook up this sauce and freeze it, too!

Skillet-Roasted Chicken & Potatoes

I love watching good cooks make delicious food! It inspires me to get in the kitchen! One day I saw Ina Garten share a simple recipe on Instagram. It was Skillet-Roasted Chicken and Potatoes. It’s all done in a cast iron skillet, so there’s minimal clean-up. The roasted chicken takes on a delicious flavor from a couple simple ingredients. I couldn’t wait to try this, so I put it on my menu for that next week, and it was fabulous and simple!
