Whole Wheat Banana Bread

I promise all my new recipes won’t be just whole wheat, but I’m on a search to eat wisely and enjoy it at the same time! As I mentioned last week, I didn’t think that was possible, but I’m finding I was wrong!

Eating whole wheat has taught me that aside from helping to lower my blood pressure, it is also helping regulate my blood sugar. I often have a drop in blood sugar levels, making me shaky, and hangry! However, since incorporating more whole wheat, that has been greatly reduced. Whole wheat does raise blood sugar because it contains carbohydrates that break down into glucose. However, because it contains fiber, it causes a slower, steadier rise rather than the rapid spike associated with refined grains.

When some overripe bananas were starting at me from my kitchen counter, I wanted to turn them into some healthier whole wheat bread and I was so impressed with the results!

Chocolate Swirl “Skinny” Banana Bread

We recently had the blessing of a couple of nights away at a lovely mountain home with dear friends. We each made simple meals for our time there. I made a banana bread to take along. I love Banana Bread because it’s the perfect addition to breakfast and also a fantastic snack!

The chocolate firmed up in the batter and didn’t really “swirl,” but all that mattered was the chocolate flavor! It was still delicious!

The new recipe I tried had a little chocolate swirled into it! It is so moist and delicious, yet it’s lower in fat and calories! This is from a Skinny Taste Cookbook that I borrowed on my Libby app. You can even make this in the crock pot, though I opted for the oven method.

Easy Pumpkin Banana Coffee Cake

There’s nothing quite like getting home from a week away and being handed ready-homemade meals. That was my “welcome home” blessing from my girls this weekend. After being with my parents for eight days while my dad has been in the hospital (and now in rehab), I came home on Friday. My body, heart and emotions were spent, but I was so thankful I could be there to help. It’s a joy, and the Lord gave strength each step of the way.

Coming home was God’s timing, which made it especially sweet. Whitney was in Tennessee visiting her sister for 24 hours, so we all got to be together (another blessing!). Then before we parted, they handed me containers of food that they had prepared for us, to lighten my load! Supper/lunch meals consisting of a chicken casserole, salad, homemade bread, and chili. Then for breakfast, Pumpkin Banana Coffee Cake and bananas. I cried. How thoughtful. How appreciated! It truly touched my heart.

My New Favorite Blueberry Muffin

I love muffins.  Okay, I love any kind of bread, but muffins are just magical, are they not?  You can eat them for breakfast, which is like having cake first thing in the morning!  What’s not to love about that?!

I have several Blueberry muffin recipes in my recipe index, but I’m adding another because these were just too good not to share with you!  I have a love for all the recipes from King Arthur.  They know how to do bread (n and everything other baked thing)!!  I found this recipe for Blueberry Muffins while looking at their Instagram account and I knew I had to give them a try.  If you love crispy edges, moist, fluffy insides and a full blueberry flavor, you’re gonna love these, too!
