A Fall Road Trip & Family Recipes

I had the blessing of making a trip to Kentucky this weekend to visit with my mom. The trip here was a beautiful fall drive through the Cumberland Gap. The trip on that route is always refreshing, but on Saturday the colors made me gasp! The curvy roads dotted with barns and silos were even prettier with the autumn colors as a backdrop. I’m thankful that the trip is an easy one. I enjoy listening to an audio book while I drive. It truly makes the time pass quickly. Then conversations with my girls and my husband also made the trip easier!

Not long after I arrived at my mom’s house she said, “Guess what we’re having for supper?” Many things popped into my head that she is known for, but before I had a time to start guessing she said, “Herbed Chicken!” Oh my, this recipe takes fried chicken up a sophisticated notch! The chicken breast is filled with an herbed cream cheese mixture and it’s heavenly! I haven’t made it for a couple of years, so I was excited about the supper meal coming in a few hours! I first shared the recipe here – a long time ago!

Easter Dinner Recap

What a wonderful Easter weekend we had! The services at church were so special. As we sang some favorite songs, my heart swelled with thankfulness as we worshiped the Lord. We do serve a risen Savior, and because He lives, we can face tomorrow! We saw the Lord in His Word, as we read in Luke that He cares enough to clothe the lilies of the field and He cares even more for the needs of His children. I can trust Him today – the day after Easter, for every need of my life, and so can you!

After church I hosted just my family for dinner. It seems that our travels keep us so busy that we don’t get together nearly as often as we’d like. So it was special for it to be just us so we could chat and get caught up.

But now of course, we must talk about the food…Oh yes!

Delicious Veggie Stromboli Recipe for Busy Nights

Last week I shared a few new recipes I was anxious to try. I have an update about one that was super easy and also delicious! I made the Veggie Stromboli from Skinny Taste and we really enjoyed it. A stromboli is kind of like a rolled up pizza. Sometimes homemade stromboli’s and pizzas are labor intensive, but a packaged pizza crust made this come together quickly.

I found a package of pizza dough at Aldi – not in a can, but a plastic bag. It was on sale last week for .99! I’m so glad I found this for nights when I don’t want to make my own crust. This is great for a busy night! You won’t be skimping on flavor, just time!

Flavorful Baked Chicken Fajitas Ready in 25 Minutes

I’m reposting an old recipe that is great when you need a delicious meal in a hurry. We love Mexican foods, and this dish is full of the kind of flavors we enjoy, plus it is very fast to make and is also a great do-ahead dish!  That alone makes it a perfect pick for a busy day!

Typically, fajita meats are grilled, which gives them great flavor, but for a meal that needs to be on the table quickly, it’s not always the best way to go.  I found this recipe on Chef in Training‘s web site (this is a great site!).  She found it on another site…and so on and so on!  There’s nothing new under the sun, but we must give credit where credit is due!  =)

3-Ingredient Healthier Queso

With the holiday season upon us, fattening foods are always lurking, ready to destroy any thought of healthy eating. Am I right? I have a great recipe for you that’s good enough to serve at a party, or for your snack craving tomorrow that will give you a healthy indulgence!

Last summer a friend told me about a “Cottage Cheese Queso” that she said was amazing and so much healthier. I was a little skeptical, but always looking for a way to cut calories and still eat delicious food, I wanted to give it a try. I’m usually slow to jump on the bandwagons of recipes that fly around the Internet, but this recipe has been on my radar ever since my friend’s suggestion. I tried it just a couple weeks ago. I’m sorry I waited so long!
