If there was a breakfast food that I could eat every single day, it would be French Toast. I love it!! I love it served the standard way with a dunk in a milk/egg bath and then made golden in a hot skillet. But sometimes you just want to add a little pizzazz to a favorite dish and make it even more special – like when you’re serving guests!
Last week I opened my favorite Cooking Light Cookbook and adapted their recipe to come up with my version of Crispy, Fruity French Toast. The crispiness comes from Rice Krispy Cereal. It adds a nice little crunch to the toast. Topping the final product with fresh berries and a sprinkling of powdered sugar makes it sublime!
The other great thing about this recipe is that it’s baked in the oven instead of having to be browned in a pan on the stove. Like my quesadillas from last week’s post, this makes this a great recipe for a crowd because of this cooking method! You can put a whole sheet pan of French Toast in the oven for 15 minutes and finish up other details of breakfast while it’s baking!
I served it with bacon to add some protein. The fruit on top is a perfect sweetness! Oh, this was good. I hope you’ll try it!!
Ingredients
2 eggs
1/2 Cup milk
1 tsp vanilla
1 1/2 Cup crushed Rice Krispies
8 slices French Bread
2 Tbl melted butter
Fresh berries
Powdered sugar
Instructions
Heat oven to 425 degrees. Mix eggs, milk and vanilla in a shallow bowl. Place Rice Krispies in another shallow dish. Dip bread in egg mixture then in Rice Krispies. Place on baking sheet that has been sprayed with cooking spray. Pour melted butter over top of bread slices. Bake 10 minutes or until lightly browned. Flip toast over and bake 5 more minutes or until golden.
Top servings with fresh berries and a dusting of powdered sugar.
