On busy days when you don’t even have time to throw something in the crock pot in the morning, there is a way to a enjoy a delicious dinner within an hour and with minimal effort. Have you ever made a Foil Packet Dinner? The varieties are endless – ground beef, turkey or chicken, kielbasa or fish and the veggies of your liking.
Last week Dale and I went away for some study/prep time and I needed a supper meal that would come together without much fuss. That’s when I decided on a Foil Packet Dinner. It took me about 10 minutes to prep and 45 minutes to bake. There was lots of pay-off for such minimal effort! This was delicious!
I’ll share what I put in our packets, but remember that you can swap out the meat or vegetables for what you prefer.
In a bowl, combine:
Cubed sweet potatoes
1 can of Fiesta Corn
1 can drained black beans
Salt, pepper and seasoning such as paprika or taco seasoning
Olive oil
1 lb ground chicken, made into four patties
Spoon sweet potato mixture onto four large pieces of aluminum foil. Place a seasoned meat patty on top, then fold foil down to form a packet and place packets on a baking sheet.

Bake at 375° for approximately 45 minutes. You could also place these on the grill.
Top each packet with choice of toppings such as salsa, fresh tomatoes, sour cream and avocado. Enjoy!
