Hash Brown Egg Skillet

When morning rolls around I’m not ready for food. Just hand over a nice cup of coffee with flavored cream and I’m good for a couple of hours. But I know I need to eat, so I eventually do.
But what to eat? Scrambled eggs…not my favorite.
French Toast? Only once a month…too fattening.
Pancakes? I like them but it’s too much trouble and not enough protein.
However, I’ve recently been making an egg dish once a week that my husband and I both really enjoy. I call it Hash Brown Egg Skillet. It’s so delicious and is done in about 15 minutes.

You could tweak this recipe to add what you like, but for our tastes I use onions, shredded hash browns, Canadian Bacon and eggs. As the recipe name says, it’s all done in a skillet on the stove. One pan – one great recipe! Here’s how you make it:

Hash Brown Egg Skillet

  • 1 -2 Tbl. Olive oil
  • 1 1/2 Cups Frozen Hash Browns
  • 2 Tbl. chopped onion
  • 3 slices Canadian Bacon
  • 2 or 3 Eggs
  • Salt and Pepper

Place Olive oil in a skillet. Add chopped onion and frozen hash browns. Season with salt and pepper. Over medium high heat, brown potatoes on one side, then flip over and brown other side. This is when I add my Canadian bacon, just to warm it up. Before they get completely brown, make small wells in the potatoes. Crack egg and pour into the wells. Lower heat to low temp and cover with a lid. Let eggs cook until they are they way you like them. I go for sunny side up because we love the yolk runny. I check to be sure the yolk still jiggles after the white is cooked. Using a spatula, divide the portion for each plate and serve!

I served it with sour dough toast and fresh fruit sprinkled with Chocolate-raspberry granola. (The granola is Love Crunch) Yum!

This is a great Sunday breakfast when dinner usually comes later than normal. It’s also a healthy meal and fits into my WW menu plan nicely! I hope you’ll try this! It’s so good…even for non-breakfast lovers!

Beating the Winter Blues

The winter blues are a real thing and I find it crucial in the middle of these winter months to make special effort to stay encouraged. Simple pleasures can go a long way in perking up my dreary spirits. Here’s a sampling of some of my recent winter day activities that helped beat the blues.

The best way to defeat being down is to have my heart lifted up through the Truths of God’s Word. This year I’m reading through the Bible using a chronological plan. Already I’ve seen new truths, been comforted about God’s care and presence, and have been reminded that God always has a plan for every person in every situation. That means right now in 2021, during a pandemic, on a dreary winter day, He is at work!

My husband and I played a round of Rummikub on Sunday evening. It was a cold night, so we set up a small table in front of the fireplace and enjoyed the warmth of the fire while we played. It was warm, it was fun, and we had time together!

We had a sunny day this week and I was determined to make the most of it. This was my radio recording day, so I headed out early so I could get my Jeep washed and also do a little shopping beforehand. It was a needed morning out!

I’ve been working on redoing our family room since September and the last piece of furniture I need for that room is a love seat. I’ve been looking for months and just couldn’t find what I wanted. We took a drive to Greeneville, TN to Robert’s Furniture Store and I found this lovely piece that is going to be perfect in my newly decorated space! It will be delivered later this week and I can’t wait. I am going to paint a wall, then I’ll be anxious to make a reveal here on my blog!
If you’re in East Tennessee, you need to visit Robert’s. It’s a locally owned business with the sweetest people and quality furniture. I can’t say enough about our experience with them!

Doing what we love, my husband and I took the scenic route through the country to go to the furniture store. The views are so pretty and the drive just made my heart smile! The sky on the way home was gorgeous…

I also spent some time in the kitchen this week. I’ve made several new recipes for supper, baked some bread, made more Rice Krispy Treats (for our small group) and also some Chicken broth in my crock pot. It feels good to be productive in the kitchen!

I pray that your winter days are being filled with blessings that you recognize as gifts from God’s hands. He’s the giver of them all.

P.S. I mentioned my radio recording – in case you don’t know, I do a daily broadcast on a local radio station. My church has all the recordings on their website. I linked it earlier and I’ll link it again, here, in case you’re interested. There’s a plethora of subjects from character traits to homemaking advice. Each broadcast is 15 minutes long. It is aired each week day on WHCB at 2:30 (recently changed) and on Saturday at 3:45. This is a ministry that the Lord placed in my lap, and I feel like the most unlikely person to be on the raido! There are days I wonder if anyone hears it, but I j ust know that I’m obeying the Lord in His direction in my life. So there you have it. If it can encourage you, than I’ll rejoice!

White Chocolate Rice Krispie Treats

What makes a cookie a “Christmas” cookie? In my opinion, it’s simply the tradition of making it only at Christmastime. I have many recipes like that. It just wouldn’t feel right to make them in July! Aurey Nutballs, and Raspberry Jam Shortbreads are two such cookies. We love them and we eat them at Christmas. Period.

But then there are cookies that you make for Christmas and you realize that there’s no way and no reason to relegate these only to holiday baking.

Say hello to my White Chocolate Rice Krispie Treats.

I didn’t realize how much I like Rice Krispie treats until I made these. Oh my goodness! I just kept dreaming about them inside the cookie tin in the pantry!

Okay, these have red and green sprinkles, but during the other 11 months of the year, you could either use sprinkles that would be non-holiday, suited to the current holiday (Valentine’s, Easter, patriotic, etc), or you could leave the sprinkles out. What makes these a notch above all other Rice Krispie Treats is the addition of white chocolate! These are just heavenly. Here’s the simple recipe:

White Chocolate Rice Krispie Treats
Ingredients

  • 1/2 stick of butter
  • 10 oz marshmallows
  • 1/2 cup white chocolate chips
  • 6 cups Rice Krispie Cereal
  • Sprinkles

Instructions:
Melt the butter in a large saucepan

Once the butter is melted add in the marshmallows and white chocolate, mix on medium-low heat until fully melted.

Remove the melted marshmallow mixture from the heat and add in the cereal and sprinkles.

Mix until fully combined.

Run your hands under water and leave them a little damp before rolling out the treats. This will help them not stick to your hands! Spoon some of the mixture onto a spoon then roll into balls. Place on waxed paper to cool and set up.

We all found these to be absolutely addictive. Get your Valentine sprinkles out in a couple weeks and make some of these with your children or grandchildren. They make a lot and trust me, you will be so happy about that!

Five Routines That Will Help During Difficult Times

Maybe with all the stuff going on in the world you’re having a bit of a hard time getting motivated in your home. I want to encourage you today about how helpful it is to keep moving forward especially during these difficult days.

If we can’t have the confidence that home will be a constant place of comfort, where will we go?

If we are also at odds with our loved ones because we are stressed, who else on this earth will love them?

Therefore…

This was supper one night this week. I moved a small side table in front of the fireplace so we could have the ambiance at our simple spaghetti supper.
  1. Keep your normal routines going at home.
    Get up and get dressed.
    Make the bed.
    Do the laundry.
    Vacuum the carpet.
    Sweep the floor.
    Make the bathroom shine.
    You have control over yourself, so be disciplined.
  2. Keep mealtimes delicious, engaging and special.
    Cook good food. That doesn’t mean you have to fix gourmet food.
    I do think there’s great value in fixing a supper meal at home, in involving your family in setting the table, and helping with clean up. While at the table, turn off the television and make effort to create conversation, even if it’s just you and your spouse.
    Turn on some relaxing music in the background.
    Light a candle.
    Set the table.
    Linger after the meal.
    Have a small dessert and coffee and take time to enjoy it all together as the gift it really is.
    It’s hard work being a homemaker, but if you don’t do it for your family, who will?
  3. Be present for your spouse and children. In all that’s going on, it’s so easy for people to feel disconnected.
    Children are certainly feeling some hard things and may need to ask questions or share any fears they may be experiencing.
    What a great time to point them to God’s Word with answers.
    Stop and pray with them over any anxious feelings they may be experiencing.
    My husband and I quoted Bible verses to one another one recent evening as we were drifting off to sleep. They were verses of comfort that did much to stop my worry!
    No one can take your place in the home. Your presence is imperative and irreplaceable.
  4. Make home the best place to be. Create a warmth that draws your family back.
    Plan for game night with popcorn and hot chocolate.
    Keep the house tidied up so it feels welcoming.
    Get that last bit of Christmas decor put away and the tree needles swept up.
    Light a new, fresh candle.
    Make comfy places for people to sit and read.
    Maybe this is the time to change the furniture around for a fresh look in your living room?
    Home is a gift, and the woman is the one who sets the tone.
  5. Make sure you’re spending greater time with the Lord each day. If we ever needed direction and comfort from His Word, it’s now.
    Pray.
    Spend time giving Him your burdens.
    Learn from Him.
    Write down what you learn.
    Stay close through the day by listening to godly podcasts.
    Meditate on God’s Word through Scripture memory.

If you wish to know God, you must know His Word. If you wish to perceive his power, you must see how he works by his Word. If you wish to know his purpose before it comes to pass, you can only discover it by his Word. ~Spurgeon

Without a relationship with God, we can do nothing that is effective for eternity.

These five things will not change the world, but they can change the people that live inside your home…including you! I pray that these simple steps will help you bring some joy from the home that our loving God has entrusted to you. You can make a difference, dear friend.

Why I Can Be Thankful for 2020

In early January 2020, my husband and I went away for a day and a night to plan for the year. Tucked away in a secluded place, we scheduled each month’s activities, ministries and leisure times. I even had the audacity to write them in my planner in INK! I knew that the Lord would allow what He desired to come to pass…but I am pretty sure I was expecting most of what I planned to happen the way I penned it. Of course, it looked much different than we had carefully mapped out.

Am I bummed about that? In no way.

Were there disappointments? You bet! Here are some of them…

Like you, that’s just a sampling of cancellations, but when I look back on 2020, I learned so much that I don’t want to forget, and I experienced things I want to praise the Lord for. Here are some of those things…

  • Greater times in the Word and prayer. He taught me so much about trusting Him, not worrying and relinquishing my plans to His perfect will as I spent time with Him.
  • Having a real life visual of James 4:13-17 and seeing the folly of making plans and holding them too tightly.
    Come now, you who say, “Today or tomorrow we will go into such and such a town and spend a year there and trade and make a profit”— 14 yet you do not know what tomorrow will bring. What is your life? For you are a mist that appears for a little time and then vanishes. 15 Instead you ought to say, “If the Lord wills, we will live and do this or that.” 16 As it is, you boast in your arrogance. All such boasting is evil. 17 So whoever knows the right thing to do and fails to do it, for him it is sin.
  • A greater appreciation for gathering each Sunday at church. Once the doors opened again, my heart was overwhelmed at the blessing of being WITH my brothers and sisters in Christ. Zoom was nice, but it felt so wonderful to be together as a church family.
  • Creative opportunities to serve others. Delivering loaves of bread and cinnamon rolls, making “curbside visits”, sending cards, and having Zoom cooking classes were a few ways the Lord gave me the chance to serve others.
  • The Lord taught me that His plans and His ways are greater and higher than mine. He brought other times of rest than we had planned. He gave different kinds of fellowship and encouragement.
  • A reminder that we are living in the last days. The last days began right after Jesus’ resurrection, and we’ve all been looking for Him to come in each of our lifetimes. Does that mean He isn’t coming? Hardly. It means we’re another year closer to standing before Him face to face. If He doesn’t come while we’re alive, we are each one year closer to the time of our own death. That means we need to be ready. The pandemic has reminded me of the evil that will prevail during the tribulation and how gullible people will be when the anti-Christ comes swooping in to “rescue” them in their desperate situations.
The trip to the beach was not really cancelled; it was delayed, but it came at a perfect time…because God knew when we would really need it!

 Psalm 85:8I will hear what God the LORD will speak: for he will speak peace unto his people, and to his saints: but let them not turn again to folly.

I didn’t enjoy some of the hardships of 2020, but it would be foolish of me to be derogatory and curse the year when the Lord taught me so much. Will I dare to return back to the folly of my “old ways?” I don’t want to be the same when this whole trial is over. Do you?

Whether 2021 is full of blessing or trial, I know this…God will be faithful…and we’re one day closer to seeing Him. Are you ready?
