Peach Salsa

I’m back raving about the delicious summer fruits again, only this time it’s PEACHES! South Carolina peaches, to be exact. Large, slightly firm, soft, fuzzy skin and sweet, juicy flesh. Yum! I love eating them plain, or slicing them up in my morning yogurt and topping it with my homemade Granola. But this weekend I saw Ivy Odom from Southern Living make a Peach Salsa, and I knew I had to try it. Am I ever glad I did! It turned my Sunday evening lunch into the best thing I’d eaten all weekend! No joke!

Peach Cobbler Dump Cake

Recently I mentioned that I try to keep my pantry and freezer “stock-piled” so I have things on hand and can make a meal or dessert quickly.  Sometimes even the best laid plans fail!  I went to make a recipe for a get-together a couple weeks ago, and realized I had run out of sugar!  But…I had a cake mix and several jars of my home canned peaches in the pantry!  Then I knew what I would make!
