What’s Cookin’ in the Country?

Happy Resurrection day!  Okay, yesterday was Easter, but like I said on Friday, believers celebrate the resurrection of Christ every day!  His life makes a difference in every day we live.  There is hope!  There is purpose!  There is a reason to witness to others!  I’d even go as far to say, Christ is the reason we make our home a heaven on earth.  We want to have an atmosphere that makes it conducive for our family and those that enter our home to see, hear and know Christ.
Can others see Christ in us when we’re preparing a meal?  Do we plan for it, cook it, and serve it with Christlike love?  That’s a challenge to my own heart, but it should be our goal.  We’re not just doing this meal thing three times a day, seven days a week to get a Woman of the Year award!  We are to do it “as unto the Lord.”  But on the light side, remember that Christ ate fish and bread, so there’s proof it doesn’t have to be a gourmet meal every time!  =)
Now, back to Easter…

My Easter menu was:
Turkey Breast with a Spice Rub
Baked Sweet Potatoes
Deviled Eggs
Hawaiian Rolls
Angel Food Cake with Strawberries
I failed to get actual food pictures, but I wasn’t so concerned about it since I’d already posted the turkey recipe on my blog before and it’s in the recipe index under Turkey Tenderloin.  That rub makes the bird so delicious and also flavors the gravy with a really great sweet/savory taste!  
I wanted to share another new recipe with you that I tried last week.  I needed something that was easy to prepare and could cook in the oven while I was busy with other tasks.  This was a great dish to come home to after a busy day!  This is for Beef Cube Steak.  This is a cut of meat that needs to cook long and slow, so I felt sure this would be a winner.  Score!!!  This was great!  I loved that it didn’t have to be fried and covered with a milky gravy.  It has a short list of ingredients and was also an inexpensive meal.  I pick these steaks up when I see them marked down.  Now I know exactly what I’ll do with these little babies!
Eating outside on a gorgeous day makes this meal even better!
Beef Cube Steak

Ingredients

  • 4 oz Cube Steaks
  • salt and pepper to taste
  • 1/4 Cup all purpose flour
  • 1/3 Cup Vegetable oil
  • 1 tsp. Beef Boullion granules


Directions

Season the cube steaks on both sides with salt and pepper. Pour the flour onto a shallow plate and press the steaks into the flour; shake off the excess flour. Heat the oil in a large skillet with lid over medium-high heat. Place the steaks into the hot oil, and cook until golden brown on both sides, about 3 minutes per side.
Pour water into the skillet to almost cover the steaks. Stir the beef bouillon and salt to taste into the water. Bring to a boil; reduce heat to medium-low, cover, and simmer until very tender, about 2 hours.
