Normally on Sunday’s I have dinner in the crock pot or oven so it’s ready when we get home from church. But yesterday, because of being away at a conference since Thursday, I hadn’t had time to prepare that type of a meal. So I turned to a menu of fish as the main dish, that cooks in under 10 minutes!
Fish is typically a great choice for a fast meal! But I also added sides dishes that were cooked in under 10 minutes. I added a starch of Couscous, which cooks in five minutes, Garlic Green Beans that cook in about 5-6 minutes, and a salad of cottage cheese and tomatoes. This menu is a great for a busy day! Here are my recipes:
Maple Dijon Salmon

Garlic Green Beans
Cottage Cheese with Tomaotes
Maple Dijon Salmon – Food Network
Ingredients
- 3 tablespoons light brown sugar
- 1 tablespoon honey – I used Maple Syrup
- 2 tablespoons butter
- 1/4 cup Dijon mustard
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon finely grated ginger
- Vegetable oil
- Salt and freshly ground black pepper
- 8 salmon fillets, 6 ounces each
Melt the brown sugar, honey (or syrup) and butter in a small saute pan over medium-high heat. Remove from the heat and whisk in the mustard, soy sauce, olive oil and ginger.
Brush salmon with vegetable oil and season with salt and pepper to taste. Place the salmon skin side down on a foil-line pan, sprayed with cooking spray. Coat the flesh of the salmon fillets with the brown sugar mixture. Place under Broiler 4 minutes. Brush with glaze. Return to oven and broil 4-5 more minutes.
When I make Couscous, I use Chicken Broth instead of water. Then I add sliced almonds to the couscous after it’s ready. This is seriously the fastest and easiest starch to make!!
These Garlic Green Beans are a nice change from the Southern Green Beans I normally fix. Whitney has shared these not only on her blog, but with us when we’ve eaten in her home. Yummy!

Yes, the almonds make it even better. Sometimes I also add dried cranberries-that’s really good!
