How kind the Lord is to allow our D&D ministry to start back up two weekends ago. We returned to a church in Florida for a meeting. It was a great time with these precious people!
After it ended, we had the fun of meeting our daughter, Whitney and her husband, Paul at Disney World! It had been 40 years since we were there, and that was as sponsors for a school trip, so it wasn’t really a true experience of the parks. Paul and Whitney are pro’s, so she planned our trip and we got to go along for the ride (pun intended!).
Since Monday is normally recipe day here on my blog, I’m going to share some of the amazing food we ate while there. The blessing is that though we took in some calories, we walked an average of six to eight miles each day, so we got in plenty of exercise!
We didn’t just eat inside the parks; we went to the different resorts to enjoy their restaurants as well. That was one of the blessings of traveling Disney with seasoned veterans!
Here are the some of the delicious things we enjoyed and the place where we ate it…
Three Bridges Signature Burger at Coronado Springs Resort
Pineapple Salsa, Oaxaca Cheese, Tamarind Mustard, Arugula, Bacon, Beer-battered Onion Ring.

Villa del Lago Wedge Salad
Crispy Chickpeas, Marinated Tomatoes, Radish, Blue Cheese Crumbles, Avocado-Buttermilk Dressing
My favorite mid-day snack was this –
Crème Brûlée Croissant – Gaston’s tavern
Crispy Croissant Dough filled with Vanilla Bean Custard.
Fish and Chips Rose and Crown Dining Room at Epcot
“Rose & Crown’s Signature Dish” Beer-battered and served with Tartar Sauce.

We had this salad with it –
Coronation Salad – Crisp Salad with Madras Dressing on top of a Crunchy Grain Cracker
The Grand Floridian had a fantastic breakfast sandwich that was super good!

House-made Sausage Patty, Over Easy Egg, Arugula, Roasted Red Peppers, Pickled Onion, Garlic Aïoli, and Whipped Goat Cheese on House-made Ciabatta served with Cafe Signature Fries.

My husband celebrated his birthday while we were at Disney World. A tall cake was in order!

Last, but certainly not least, were these Cheeseburger spring rolls in Magic Kingdom. So good! I’m excited that I found a copycat recipe on Pinterest. I can’t wait to make these at home!

I’ll be sharing more this week about our wonderful trip, but in the meantime, I’m going to be reminiscing about the great food we ate (while I’m back on a healthy eating plan!)!
