Roasted Frozen Broccoli

When I’m making a “normal” dinner meal, I always feel stumped about what sides to add. I feel like I often get into the boring routine of green beans, peas and corn. So I love it when I find a new way to make a vegetable like broccoli the star side dish without turning it into a heavy casserole (which I also love!).

This method of cooking frozen broccoli is absolutely brilliant. It turns it into a delicious side dish that you’ll be craving. No kidding!

You may look at that picture and say, “It looks burned!” It’s not. It’s charred, and that charred flower is crispy and loaded with flavor! A tip I would share is that I buy the Broccoli Florets. I’ve found that the “broccoli cuts” are lots of stem and only little bits of the flower part. The stem isn’t my favorite. It’s worth it to spend a little more for the florets. Here’s the simple cooking method:

Roasted Frozen Broccoli

Ingredients:
1 (32 oz) bag frozen broccoli florets
2 tbsp extra virgin olive oil
Zest of 1 whole lemon (about 1 tsp)
1 tsp garlic powder
1 tsp coarse salt
Fresh ground pepper (to taste)
1/4 cup finely grated Parmesan Cheese
Olive oil cooking spray

 Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper and set aside. Toss frozen broccoli florets with olive oil, lemon zest, garlic powder, salt, and pepper.

Spread seasoned broccoli onto the parchment-lined pan, making sure that they are spaced out and not touching in order to evenly roast. Spray with a little olive oil cooking spray.

Roast frozen broccoli for 20-25 minutes until lightly golden. I roast mine for 25 minutes for a little extra crispiness. As soon as the broccoli emerges from the oven, sprinkle with the freshly grated Parmesan Cheese. Serve immediately.

Roasting vegetables in a hot oven is my favorite cooking method. You get all the flavor and nutrients without having to add extra ingredients. This dish is so great because I can keep it on hand all the time, like I would a pantry staple.
