Peach Cobbler for Two

Because there are just the two of us eating most meals at our house, and because we try to eat healthy most days, I attempt to not keep sweets on hand! But when a celebration comes along, it seems that dessert is a special addition to the meal!

Recently on Father’s Day, I went to Taste of Home’s site to scroll through their recipes created specifically for two. I love that they offer scaled down portions! When I came across a small Peach Cobbler, I knew I had found the sweet treat we would enjoy! This was so easy and had amazing final results!

Happy Summertime!

I absolutely love summer. It contains so many special blessings from our good God!

Celebrations! Last Sunday we had a simple Father’s Day. I fixed a meal of Chicken Piccata, Red skin Potato Salad and green beans for our meal after church. I’ll share the new dessert I made next Monday. It was a mini version of a classic! See the pic below for a sneak preview. I shared last week about my dad, but I am also blessed with a husband who is a loving, godly, and fun father and Pappa!

Hot Pepper Strawberry Freezer Jam & Charcuterie Cups for Easy Entertaining

While we serve at The Wilds this summer and befriend the sponsors who bring their kids to camp, I have the blessing of teaching a ladies’ session each Wednesday afternoon. As a part of our time together, I long to show hospitality and create fellowship among the women. It’s a bit challenging, but I believe if we ask the Lord how we can be hospitable, He will make a way.

As I prayed about how to do that this summer, the Lord brought my Strawberry Freezer Jam from last summer to mind. I made a lot, and it needs to be eaten! I wondered how I could use it, then I thought of Hot Pepper Jelly poured over cream cheese. I knew that would make a great little snack to serve my new friends at camp! Then I set to work to turn my freezer jam into hot pepper jelly! It was an easy task!

Reflecting on My Dad’s Love: A Father’s Day Tribute

This Father’s Day weekend, I have been thinking much about my dad who has been in heaven for a little more than two years. His passing was hard, but honestly, he had suffered so much that we were all relieved that he was no longer sick, but was now in heaven with His Savior. As the song goes, “All is peace forevermore, on that happy Golden Shore.” I can only imagine all he has been enjoying since his feet touched that Golden shore!
