A Peek From My Porch

How time changes things!  This was the first Memorial Day that our guests were married children!  What a sweet offer Alli made after I invited them to come, “What would you like me to bring?”  Wow.  Just Wow!  Of course I didn’t say, “Just bring yourselves!”  I said, “What would you like to bring?”  She offered her wonderful Deviled eggs and also Baked Beans.  Both were delish!

If you peeked from my porch on Memorial Day you would have also seen that my husband worked really hard in the backyard.  He planted some small shrubs at the back of our porch to create a bit of a border.  It looks so pretty.  I also potted some herbs that will be at my fingertips when I’m cooking, since they’re on the patio, just outside the kitchen door!  I love cooking with fresh herbs!  I got parsley, chocolate mint (!), and thyme.  We also planted Cherry Tomatoes.  So it was a productive day, as well as a delicious one!

Here we are getting ready to partake of the grilled hamburgers and side dishes.

The real showstopper of the meal was dessert ~ Strawberry Shortcakes.  These shortcakes are from Cooking Light and are every bit as delicious as the “regular” recipe with twice as much shortening!  Put these on your menu for Fourth of July.  Your family will thank you!

1 1/4 cups all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
3 tablespoons chilled stick margarine or butter, cut into small pieces
1/2 cup low-fat buttermilk
Cooking spray
6 tablespoons frozen reduced-calorie whipped topping, thawed
Whole strawberries (optional)

Preparation
Preheat oven to 425°.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, 3 tablespoons sugar, baking powder, baking soda, and salt in a bowl; cut in margarine with a pastry blender or 2 knives until mixture resembles coarse meal. Add buttermilk, stirring just until moist (dough will be sticky).
Turn dough out onto a lightly floured surface, and knead lightly 4 times with floured hands. Pat dough into a 6 x 4-inch rectangle. Cut dough into 6 squares. Place 1 inch apart on a baking sheet coated with cooking spray. Bake at 425° for 12 minutes. Cool on a wire rack.
Split shortcakes in half horizontally using a serrated knife; place each bottom half on a dessert plate. Spoon 1/4 cup strawberry mixture over each bottom half. Top with shortcake tops; spoon 1/4 cup strawberry mixture over each top. Top each serving with 1 tablespoon whipped topping; garnish with whole strawberries, if desired.

Make a Choice

Life is about choices.  Last night I made the choice to play a second game of croquet with my family, rather than run inside and write a blog post.  Soooo, there’s nothing to read today, except for the fact that I made the choice to be with my family, rather than do something else and I know it was the right choice!  We had a great time together (even though my son-in-law beat me the second game!).

What’s Cookin’ in the Country?

From the very fist week of Alli’s engagement, she asked if I would do a bridal luncheon for her and her bridesmaids on the day of her wedding.  Loving to have folks over like I do, and loving to cook like I do, I thought this was a great idea!  

We decided on brunch, so the girls would have more time to get ready for pictures. This meal and time together made the day so leisure and relaxing.  They lingered at the table, enjoying seconds while laughing and talking about weddings past, and the one before us.  I loved having these sweet girls in my dining room, and getting to serve them!  It was so much fun! 

I worked ahead of time and got as much done before the brunch as possible.  The decor was completely finished by about Wednesday. Take a look…
I made a rag garland (picture below) like we had at the reception, but I made this one much shorter in length.  I went to the Goodwill and bought a white sheet and a yellow sheet and tore them into 2″ strips and tied them to jute.  I knew that would be much cheaper than buying fabric.  I only spent $5 on both sheets!

The pom poms hanging from the chandelier were made from tissue paper and cost me about $2.  Here’s a good video on how to make these.  

I made name cards for each place using my scrapbooking materials.
 For the centerpiece, I got mums from Sam’s Club.  First I filled my crystal ice bucket with the flowers, then I slid the lemon slices around the edge of the container for an extra pop of yellow.
And now for the food!!!!!!!!!!!

Hash Brown Egg Cups

Bacon Strips

(substituted blueberries for the strawberries)

Strawberry White Chocolate Scones

Fresh Fruit

Orange Julius/Coffee
These scones are OUT OF THIS WORLD DELICIOUS!

 2 cups flour
1 tbsp baking powder
1/4 cup sugar
1/2 tsp salt
6 Tbl. COLD unsalted butter (cubed)
1 cup chopped strawberries (the riper the better)
3/4 cup chopped white chocolate
(plus a few tablespoons chocolate to melt and drizzle on top when baked)
3/4 cup heavy cream (plus 2 tsp to use to melt white chocolate)

Preheat your oven to 425 degrees and line a baking sheet with parchment or foil.

In a large bowl, whisk together the dry ingredients. Then cut the butter in with a pastry cutter, or 2 knives until only pea-sized lumps remain.

Then fold in the strawberries and chocolate with a rubber spatula until the berries are coated in the flour. Then pour in the heavy cream, and gently stir to distribute.

Once the cream has mostly absorbed, use your hands to knead the dough in the bowl GENTLY, to get all of it in a ball. Be sure to not overwork the dough, not everything needs to be mixed entirely! Pour out onto a well floured surface, and sprinkle top with flour. Gently press the dough until its down to 3/4 inch thickness, and in the shape of a circle.

Using a large, floured chef’s knife, cut the circle into 8 even wedges.

Place on the baking sheet giving each scone a couple inches to grow, and bake for 12-15 minutes. (It’s important to separate them for them to bake through)

Once they have cooled, microwave the extra white chocolate and a little bit of cream until melted. Using a ziploc or a pastry cone decorate with zig zags or stripes of chocolate.

I love the yellow straws to slurp sip the yummy Julius.  

Orange Julius

6 oz. Orange Juice concentrate (undiluted)
1 Cup milk
1 Cup water
1/3 – 1/2 C sugar
about 10-12 ice cubes

Mix in blender. Serve immediately.

These were a Pioneer Woman recipe.  They over-baked a bit!  Live and learn!  Next time I will reduce the cooking time, but they were good anyway!

Hash Brown Egg Cups

Ingredients
6 whole Medium Russet Potatoes (6 To 8)
 Salt And Pepper, to taste
24 whole Large Eggs
 Non-stick Cooking Spray

Preparation Instructions
Preheat the oven to 400 degrees.
Bake the potatoes until almost tender (potatoes should still have a little bite) 45 minutes to 1 hour. Allow to cool, and then peel and grate them. Season well with salt and pepper. (You can freeze these at this point by flash freezing them,  then they’ll be ready for whenever you need hash browns.)
INCREASE OVEN TEMP TO 425 DEGREES.
Spray two muffin pans generously with cooking spray. Scoop 3 to 4 tablespoons of grated potato into each muffin cup. Use your fingers to gently press the sides and bottom in each muffin hole to make a nest (don’t press the potatoes firmly against the pan; they should sit lightly in the pan.) Spray again (very lightly!) with cooking spray. Bake for 15 to 20 minutes. Watch and make sure they do not burn. (If they seem like they’re not browning, kick up the temp to 450.) Remove when the nests are golden brown.

Brunch is a great meal to have for guests, because it gives you a little more time in the morning to prepare than breakfast would.  Plus you can have sweet and savory dishes, and who doesn’t love having white chocolate first thing in the day?!  


I loved having the bridal brunch; for me it was a highlight of the whole wedding event.  I was surrounded by the bride and her girls, then got to spend the next couple of hours helping and watching them get ready for the wedding.  It was a super-special time!

Freshen Up Friday

Yesterday was “Freezer Jam-making day!”

Nothing freshens up a day like a row of jars of Strawberry Freezer Jam on the counter!  I always make at least two batches and  maybe three, because we love this stuff!  We put it on toasted Sour Dough bread, English Muffins, or Strawberry muffins. Our goal is to have a jar for Christmas day Angel biscuits, so I have to make sure that the quantity in the freezer will last until then!  

This freezer jam has to be the easiest domestic job you’ll ever do in your kitchen (aside from emptying the dishwasher!).  If it seems intimidating to you, it’s because you’re probably thinking that canning is involved – IT’S NOT!  You mix up the jam, ladle it into jars and twist a lid on.  Voila! You’re done!
Let me walk you through the steps that my packet had in it.  Each box of Sure Jell could have slightly different instructions.  Be sure to follow your directions explicitly.

  1. Buy fresh berries – local are best!  You’ll need a quart for each recipe you make.
  2. Wash and slice berries.  Mash 1 cup at a time with a potato masher.
  3. Measure 2 cups of berries (exact measurements are essential!) and put them in a large bowl.Measure 4 cups of sugar and add to berries.  Mix and let set 10 minutes, stirring occasionally.
  4. Add 3/4 cup water and Sure-Jell pectin to small saucepan.  Bring to boil over high heat, stirring constantly.  Boil one minute, stirring constantly.  Add to strawberry mixture. Stir several minutes to combine.
  5. Ladle into clean jars.  Wipe rims and screw on lids.  Let set on counter for 24 hours. Place in freezer.

In the meantime, admire your beautiful jars of jam!  Instagram a picture of your jam.  Post it on Facebook, and then give yourself a huge pat on the back for being so domestic!

My sweet daughter brought me those for a hostess gift!  They came from Dollar General. My cute little polka dots lids came from there too.

Discerning God’s Will

A decision stretches out before you.  As you look ahead, it seems full of crossroads.  You wonder which way to turn, or whether you should simply stay on the path.  How is one to make a godly, biblical choice?  How can you know God’s will?

We’re all in this situation over and over again.  You’d think it would get easier, but truth be known, each decision is just as difficult as the last.  I’m still on this path, too, mind you, but I have learned a little about God’s directives and what He does when we look to Him for direction.

  1. Make sure your decision is biblical.  If you’re praying about doing something that God clearly points out as sin, you can stop praying.  God has already shown His will concerning that.  Is dating or marrying an unsaved man a question for you?  Forget it.  God’s drawn the line in His Word.  Have you been offered a job that is great money, but would lead you away from church on a regular basis?  Why pray about that? God wants you to draw to Him. Going into business with an unsaved person?  God wants to protect you.  Obey His Word.  You can trust God’s Word.
  2. Connect what happens next after you pray.  It is so easy to be earnest in prayer, asking the Lord to show you what to do, then get up off your knees and completely forget what you just prayed!
     
    • For example, about 5 months ago or so, my husband and I had been invited to Spain to come and speak at a Teen Mission Retreat.  What a wonderful opportunity!  How terrific to return to a place we’d visited before and for which we have a burden!  What a blessing to get to invest in young lives there!  But then, we wondered:

      1. Could we afford it?  The ministry that invited us would take care of us once we got there, but we needed to provide our flight over.  How would we come up with air fare for a flight like that?  
      2. Is that a good time to be away?  
      3. Who would fill in while we’re gone?  
      4. Just because it’s a good thing, is it what God wants us to do?
    • While we were praying about it, we had a revival meeting at our church.  One night the evangelist preached about using your life to the fullest while you have the opportunity.  I felt the Lord tugging at my heart concerning Spain.  When we got home from the service that night and we were lying in bed talking about the preaching, I asked my husband if God had spoken to him about the trip.  “Yes!  I really believe the Lord is telling us to go.”  He then immediately got up and emailed the missionary to tell him he could plan on us attending the retreat.  We’d prayed. God used a preacher to confirm His will.
    • We’ve prayed about God’s provision for the airfare, then, just this week, totally out of the blue, someone called and had learned we were going and wanted us to know that they’d been directed of the Lord to help with our flight! God continues to confirm His will and provide for His plan. You can trust God’s leading  
  3. If God confirms in His Word, uses other means to show His will, and yet it seems impossible, step out in faith and trust Him.  God is the God of the impossible.

    • When we were praying about our recent house purchase, it seemed totally ridiculous to think about!  We prayed.  God dropped the house plans for this house in our laps by a woman in our church.  We kept walking through that open pathway and in a way that only God could do, here we are today.  I’m amazed every single morning when I open my eyes here!  You can trust God with the impossible

  4. If the Lord is saying “No,” then wait.  Don’t move.  I prayed ten years about a house.  It was worth the wait!  God’s timing will be perfect.  I heard the words of a song yesterday that said, “What if         trials of this life are your mercies are in disguise?”  God isn’t being mean, He’s guiding us. He’s protecting us.  He knows what is ahead.  I love the illustration that God has a helicopter view.  We only see from the dashboard.  He sees the “wrecks” up ahead and could be, in His mercy protecting you from a danger you cannot see.  You can trust God for His perfect timing.

I trust this helps and encourages you today in whatever decision you need to make.  The Lord wants to show you what decision to make.  Be patient and let Him lead you in His perfect Word, way, power and time!
