Brighten Your Spring with Lemon Muffins

What says, spring more than lemon-flavor? I love its tanginess, its brightness and even its color. I have many delicious lemon recipes that I’ve used over the years, including Lemon Loaf, Lemon Meringue Pie, Lemon Pudding Cake and Coconut Cake with Lemon Curd. But since you can’t have too many lemon recipes, I recently made a Lemon Muffin that paired well with the Rotisserie Chicken Dinner I served. My husband loved them! They were equally as good served alongside our breakfast the next morning!

Last week I had the urge to make a new recipe, so I went looking for another coffee cake to add to my collection. I found a 1997 Southern Living magazine page neatly folded and tucked into the safety of my recipe box! As I unfolded this treasure, I found two cake recipes waiting to baked! They both looked delicious. The decision as to which I should make was an easy one. As I read the ingredients, I realized that I had everything necessary to make the Banana Sour Cream Coffee Cake.

Chocolate Swirl “Skinny” Banana Bread

We recently had the blessing of a couple of nights away at a lovely mountain home with dear friends. We each made simple meals for our time there. I made a banana bread to take along. I love Banana Bread because it’s the perfect addition to breakfast and also a fantastic snack!

The chocolate firmed up in the batter and didn’t really “swirl,” but all that mattered was the chocolate flavor! It was still delicious!

The new recipe I tried had a little chocolate swirled into it! It is so moist and delicious, yet it’s lower in fat and calories! This is from a Skinny Taste Cookbook that I borrowed on my Libby app. You can even make this in the crock pot, though I opted for the oven method.

Cherry Coffee Cake

Happy October! Fall is a season of comfort foods and delicious coffee cakes enjoyed with mugs of steaming coffee. Today I’m sharing a new recipe recently introduced to me that will perfectly fit those autumnal menus.

Last week our small group had a fellowship dinner. We decided the theme would be Breakfast for supper. A couple of our dear friends from out of town were going to be here to join us and she wanted to make something to contribute to the meal. Her recipe was a hit with everyone! Cherry Coffee Cake was her recipe, and it tastes like a cross between a pastry and a cake. You could substitute another fruit topping, but I’m telling you that the cherry was so delicious! Cinnamon Swirl Bread

I love Cinnamon Bread and have made it often using my sour dough starter. It’s good, but recently I was flipping through an old bread cookbook of mine, and found a recipe for Cinnamon Swirl Bread that is out of this world! It’s a little different than any recipe I’ve made or eaten. Each short side is rolled up toward the middle, making the cutest slices!

The filling has brown sugar, cinnamon and walnuts in it. When I put a piece of this in the toaster, buttered it a little and sprinkled cinnamon and sugar over the slice, it was heaven! It made a wonderful breakfast, alongside my scrambled eggs. It’s kind of like having a cinnamon roll, only it’s not nearly as fattening!
