Healthy Low-Fat Meal Ideas for the Week

I’m excited that we have a couple weeks at home! That means I get to cook for us, which requires planning ahead. I’m going to go for some good protein and low fat meals. Busy Day Supper

When I have a super busy day in the kitchen making cookies, pies, or prepping for “big” meal to come, I try to have an easy recipe on the menu that comes together quickly for our supper. The last thing I want to do is spend a long time prepping another dish.

I have shared many sheet pan dinners before, but I have a new one today. This one is Salmon, potatoes and broccoli. This was so good, and was ready in less than 30 minutes!

Our little raised bed garden is producing about a pint of Cherry Tomatoes each day. right now. They are so good that I can’t bear to see one go to waste! Their sweet flavor makes them a great snack all on their own, but they’re also good baked into savory recipes!.

Roasted Salmon Tacos

I’ve recently been watching Barefoot Contessa while I’m working in the kitchen.  I watch her on You Tube and I love that because there are no commercials!  It’s just recipe after wonderful recipe pouring out of her lovely kitchen.  She always inspires me to cook!!

I recently saw her make these Salmon Tacos and knew I had to try them.  Wow!  Are they good!  There’s a tangy dill slaw that adds a nice little crunch to the slightly spicy salmon.

Honey-Lemon Glazed Salmon Salad

Happy Monday, friends!

I have a great recipe to share today!  Salmon has become a favorite dinner for us because:

  1. It’s fast!
  2. It’s delicious!
  3. It’s healthy and good for you!
    1. Promotes over all good health
    2. Fights cancer
    3. Makes bones stronger
    4. Fights neurological problems such as Alzheimer’s
    5. Helps eye health
    6. Better immunity…and more!

Those are all good reasons to learn to love this fish!!  But don’e miss the fact that it’s so good!
