Chicken – we love it any way it comes, but I especially love it when it is grilled! All those charred bits of goodness on the edges….Mmmm!
My go-to grilled chicken has been just barbecued because I haven’t had much success with chicken marinades UNTIL I found this recipe!! This Greek yogurt marinade really sticks to and absorbs into the chicken. It all makes these kabobs so flavorful!

Note: You don’t have to make kabobs; you can marinade and grill larger pieces of chicken, just adjust your cooking time.
These are delicious served alongside this pita bread. We filled our pita bread with the kabob meat and veggies! Yum!!

Grilled chicken is unbelievably delicious! You will want this recipe on repeat, I promise!

Wow, I had another surprise event this week, unlike the fun birthday surprises I enjoyed earlier in the month! This one sent my husband to a retina specialist while we were in upper New York state last week.

Call it age, call it lazy, but I’m changing my game this year with my fall decor. Instead of spreading fall leaves, pumpkins and corn stalks everywhere (well I never have spread corn stalks everywhere, but for the sake of making my point I’ll add them!), I’m choosing to make a few groupings.

This mum came back from last year. It’s a whopper, isn’t it? I’m loving it! It’s going to be stunning in a few days! I may add some real pumpkins in a week or so, but for now I think the flowers speak for themselves!

I had the blessing of being in upstate New York last weekend where the colors were just beginning to turn. It made me excited for fall to come to the south!

I’m still changing what you see here. Simplicity is what I’m longing for and maybe you saw a book here that is inspiring me in that direction? I’ll keep you posted on how that turns out!

The only thing better than a big pie is a personal one! As in, it’s ALL yours!
That might sound excessive, but it really isn’t because it’s a miniature one, made in the lid of a canning jar. Not only are they adorable in their miniature state, they’re also practical and can be suited to each person’s taste.

For our last Apples of Gold class, we rolled these mini pies out! It was so much fun, and a delicious ending to our six weeks’ discipleship!

We made up a recipe for a regular two crust pie, and gave 11 or 12 of these mini pies. Placing them in a canning jar lid makes it very easy to pop them out, as though they were in a springform pan. After they’re baked, you simply push up on the ring and they come out so easily!
We made Kentucky Derby Pie and Blueberry Pie. We simply divided the filling. They take the same amount of time to bake as a large pie.
It was as much fun to decorate them as it was to eat them… well almost! 😉
