Freshen Up Friday

I got the nicest housewarming gift from a friend a couple months back…it was a food Saver/ Vacuum Sealer like This one…

To be honest, it’s not something I would have thought to purchase for myself, but my sweet friend had one and knew how useful they are in keeping foods fresh, so she ordered one for me.  I’m SO thankful for it!  At Christmastime when I had an abundance of goodies, breads and soups leftover, rather than chunking stale items in the trash can, I got out my sealer and put those little gems into vacuum sealed bags and then froze them.  They won’t have freezer burn or taste old when preserved like this!

Also, buying meats on sale assures me that they’ll be fresh when I separate them into smaller packages.  I have sealed crackers and chips, too.

If you like to buy in bulk, I’d highly recommend a sealer like this!  It will keep you from tossing things that have gone bad before you had a chance to use them!  This is a great tool!  Freshen up your foods with this sealer; I think you’ll be really glad you purchased this.  Thanks again, Becky!

Oh, and be sure to refresh yourself by being in church on Sunday.  Nothing will encourage you like the preaching of God’s Word and the fellowship of other believers!

One Word

One.  
One God.  One life.  One love.  One choice.  
One Word –
it says a lot.

Have you heard about choosing one word for the new year?  It spoke to me when I read this idea.  It will be the word that defines each day, and then the whole year.  It will guide decisions, define choices.  It may refrain or it could push one forward.  What One word could characterize last year?  What word would you want to order this year?

My Word is JOY.  I want to have joy when spending time with the Lord.  I desire joy to be the epitome of my marriage.  I want it to be the driving factor of my service to the Lord, the work I do at home, and the attitude in which I minister to others.

Some antonyms of joy are:  sadness, sorrow, seriousness, melancholy and woe.  Who wants to be around a person with that kind of disposition?  Who would want that kind of Christianity?

My verse for the year that will remind me of my word is – Acts 20:24 – But none of these things move me, neither count I my life dear unto myself, so that I might finish my course with joy, and the ministry, which I have received of the Lord Jesus, to testify the gospel of the grace of God.

So, today, I move forward.  How?  With joy.  Joy in trials, hardships, good times and bad.  By God’s grace, I desire to begin and finish 2014 with Joy!

I’d challenge you to think of a word that will motivate you this year.  What word will it be?  It’d love to hear!

A Peek From My Porch

The coffee is perking in the coffee pot in the kitchen downstairs while the sun is peeking up from behind the hill in the front of the house. The kitty purrs and rubs against my legs. She is fed, petted, and then I plod down the steps toward the sweet “gurgling” of the coffee pot. A cup awaits, poured by my thoughtful husband. The hot beverage is foamy and slightly sweet. Cup in hand, I move towards the fireplace and stand in slippered feet while sipping the warm liquid. My mind races to the day ahead of me. So much to do. So much for which to prepare. If my body kept up with my thoughts, I’d be doing a 100 yard dash up the stairs right now to get ready for the day, but no – first I must still my heart in God’s Word. I sit. I read from my worn, lovely copy of the Bible. I hear God’s voice. I bow to pray. I seek direction for this day. My heart is quieted.

It is then that I reach for my planner book and pen. I scribble plans and priorities for these twenty-four hours, hopeful that I might accomplish these things on my “to-do” list, knowing that the Lord could change these plans. And that will be the Best plan. Today is His day. This year is His year.

Have you quieted your heart with time spent with the Lord yet today? It’s easier and a stronger pull to check all our social media first, isn’t it? To see what is going on the the world, instead of what needs to be going on in our hearts. Nothing will be right this day if our heart is not first right with God.

I’m asking the Lord to help me make better use of my free minutes this year. Instead of making a New year’s Resolution, I’ve set a goal to accomplish some projects in the next 100 days, which will be April 11, 2014. I chose 100 days, because it’s a short commitment. The end is in sight. I have several things I’ve been working on for the last couple of years (gasp!) that I’m desiring to complete. On Friday, April 11th, I’ll share my progress with you, but will also update along the way. I’ll be a little generic, but let me share the three things I’m going to be working on:

  1. A passage of Scripture to memorize
  2. A personal hobby/craft to finish
  3. A personal goal to complete
There’s the peek into my New Year and what I’m asking the Lord to help me accomplish. How about you? Could you think of something you could accomplish in 100 days? It’s only 1/3 of the whole year. Why not finish a few things that you’ve left undone in these next three and a half months? I’d love for you to join me!

I’d encourage you to write down your goals for the 100 days. Be specific. Then each day on your planner, write in time to work on those projects – even if it’s 15 minutes! You’ll be surprised how much more you’ll accomplish with a plan!

A Look Back on 2013

New Years Eve is a the day we all turn around and take a peek behind us.  We like to remember where we’ve been, what we did, and what was accomplished.  Those are the things memories are made of!

For the believer, this day is more than just remembering the good times; it’s also a time to look and see if what we’ve done in the last year has been effective in an eternal way.  Whose life have we touched?  Have we changed others’ perspectives about their lives and their trials because of the Scripture with which we gave them?  What biblical truths and principles have we poured into our friends and family?  How has our marriage pointed the world to our Savior?  How have we grown individually closer to the Lord in this last year?  How much more of His Word do we know?

If you sigh when you read those questions because you didn’t accomplish as much as you’d like, then you have a whole clean slate in front of you, starting at this new year.  Be sure to come back for some simple encouragements tomorrow about how to branch out in this next year to accomplish those goals the Lord brings to your heart. I won’t be writing about making resolutions, by the way.  =)

One of my favorite personal memories from this past year was the day we came to look at the inside of this house for the first time.  I knew it was what I had prayed for the minute I walked through it.  My husband and I were on the stairs when I asked if he would pray with me that the Lord would give us this house, if it was His will.  Dale took my hands, and we prayed in the stair well.  Then the day we moved in, we stood in the same place, held hands, and thanked the Lord for answered prayer!   What is a favorite memory of yours from 2013?

What’s Cookin’ in the Country?


Christmas dinner. . .ahhhh. What’s not to love about those delicious holiday meals (aside from the calories!)? I broke a little away from our traditional ham dinner to Pork Roast with Cranberries. Why? I had gotten a pork roast on sale the week before, and just decided pork is pork! It was a nice change and a delicious one! Here’s my plate. . .Yeah, it was too much and I didn’t finish it!
My menu:
 
Pork Roast with Cranberries
Twice Baked Potatoes
Broccoli and Corn Scallop
Strawberry Pretzel Salad
Pork Roast with Cranberries
Ingredients
1(2 1/2-lb.) boneless pork shoulder roast, trimmed of fat
1 cup sweetened dried cranberries
1/2 cup chicken broth
1 teaspoon shredded orange peel
1/2 cup cranberry juice cocktail
2 tablespoons cornstarchDirections:
1. Place pork roast in 3 1/2 to 4-quart slow cooker.
2. In small bowl, combine cranberries, broth, orange peel and 1/4 cup of the cranberry juice cocktail; mix well. Pour over roast.
3. Cover; cook on low setting for 7 to 9 hours.
4. To serve, place roast on serving platter; cover with foil to keep warm. Pour juices from slow cooker into medium saucepan; if necessary, skim off any fat.
5. In small bowl, combine remaining 1/4 cup cranberry juice cocktail and cornstarch; blend well. Stir into juices in saucepan. Cook and stir over medium heat until bubbly and thickened. Serve with pork roast. Garnish with shredded orange peel if desired.

The side dish pictured above is a fabulous recipe. With corn AND broccoli in one dish, you’re doubling your time in preparing vegetables. This is creamy and yummy and has a cracker topping for crunch. Yum!

This is a dish from Kraft that I got several years ago. Am I ever glad I discovered it in my recipe box before Christmas!

Broccoli and Corn Scallop
2 Tbsp. chopped onions
2 Tbsp. butter or margarine, divided
1 Tbsp. flour
1-1/4 cups milk
1 pkg. (8 oz.) KRAFT Shredded Monterrey Jack Cheese
1 can (11 oz.) corn, drained
12 RITZ Crackers, crushed (about 1/2 cup), divided

2 pkg. (10 oz. each) frozen broccoli spears, thawed, drained (I used fresh, raw broccoli instead)

HEAT oven to 350°F.

COOK and stir onions in 1 Tbsp. butter in medium saucepan on medium heat 1 min. Blend in flour. Gradually stir in milk; cook and stir 2 to 3 min. or until thickened. Add cheese; cook 2 to 3 min. or until melted, stirring constantly. Stir in corn and 1/4 cup cracker crumbs.

PLACE broccoli in 12×8-inch baking dish; top with sauce. Melt remaining butter; mix with remaining cracker crumbs. Sprinkle over sauce.


BAKE 30 min. or until heated through.

Strawberry Pretzel Salad
2 cups crushed pretzels
3/4 cup melted butter
3 tablespoons sugar, plus 3/4 cup sugar
1 (8-ounce) package cream cheese
1 (8-ounce) container whipped topping
2 (3-ounce) packages strawberry gelatin dessert mix
2 cups boiling water
2 (10-ounce) packages frozen strawberries
1 (8-ounce) can crushed pineapple
Whipped topping or whipped cream, to garnish
Preheat oven to 400 degrees F.
For the crust, mix the pretzels, butter, and 3 tablespoons of sugar. Press this mixture into a 9 by 13-inch pan and bake for 7 minutes. Set aside and allow to cool.
In a mixing bowl, beat together the cream cheese and 3/4 cup of sugar. Fold in the whipped topping, and spread over the cooled crust. Refrigerate until well chilled.

In a small bowl, dissolve the gelatin in the boiling water, and allow to cool slightly. Add the strawberries and pineapple, and pour over the cream cheese mixture. Refrigerate until serving time.

We didn’t have dessert until later that night, but it was our traditional Kentucky Derby Pie. Oh my. It’s worth the wait to only have it twice a year!
