Flavorful Baked Chicken Fajitas Ready in 25 Minutes

I’m reposting an old recipe that is great when you need a delicious meal in a hurry. We love Mexican foods, and this dish is full of the kind of flavors we enjoy, plus it is very fast to make and is also a great do-ahead dish!  That alone makes it a perfect pick for a busy day!

Typically, fajita meats are grilled, which gives them great flavor, but for a meal that needs to be on the table quickly, it’s not always the best way to go.  I found this recipe on Chef in Training‘s web site (this is a great site!).  She found it on another site…and so on and so on!  There’s nothing new under the sun, but we must give credit where credit is due!  =)

Amazing Shrimp Tacos

We love a good taco at our house, and in recent years, we’ve come to especially love shrimp tacos. I’ve shared posts here about trying to replicate restaurant’s recipes where we’ve eaten.

I have just kept making little changes to improve my recipe. Last week I think I finally landed on our absolute favorite way to eat this fishy taco! The blessing is that it’s still very simple and also super fast! I’m excited to share the recipe with you!

Crispy Fish with Lemon Dill Sauce

When I need a quick meal idea, I love to make fish. It thaws quickly and it cooks quickly. I found a great, healthy way to make crispy fish without frying it.
