Delicious Skillet-Cooked English Muffins

Ahhh, English muffins – crispy, crunchy and perfect with a little butter and jam for breakfast! I have made Sour Dough English Muffins and they are good, but they are labor intensive. I recently found a recipe that produced this delicious bread in a much quicker fashion. I had to try, and I’m so glad I did!

English muffins are not baked in the oven, but are cooked in a skillet. That gives them their beautiful golden exteriors and soft centers. Perfect for absorbing the butter you slather on! When I make one for breakfast, I like to toast it in the toaster and get them crisped up. These are perfect for Eggs benedict, or even pizza burgers! Here’s the recipe:

Disney Magic and Real Marriage: Keeping Love Alive

Cinderella and Prince Charming, Snow White and Prince, Ariel and Eric, Beauty and the Beast…we are familiar with these Disney couples, and you know what? Disney is romantic! My husband is naturally a romantic at heart, and he seems to always find the sweetest places/opportunities to demonstrate his love to me. But Disneyworld was a really easy place to do that, considering all the love stories in their movies and all the great settings! Here are a some pics from our trip last week that are examples of how easy it is to have those love embers fanned!

Disney Deliciousness

How kind the Lord is to allow our D&D ministry to start back up two weekends ago. We returned to a church in Florida for a meeting. It was a great time with these precious people!

After it ended, we had the fun of meeting our daughter, Whitney and her husband, Paul at Disney World! It had been 40 years since we were there, and that was as sponsors for a school trip, so it wasn’t really a true experience of the parks. Paul and Whitney are pro’s, so she planned our trip and we got to go along for the ride (pun intended!).

Since Monday is normally recipe day here on my blog, I’m going to share some of the amazing food we ate while there. The blessing is that though we took in some calories, we walked an average of six to eight miles each day, so we got in plenty of exercise!

We didn’t just eat inside the parks; we went to the different resorts to enjoy their restaurants as well. That was one of the blessings of traveling Disney with seasoned veterans!

In fact, it’s been hard on ALL of us.
