(L)Oven Monday – A Healthy, Yummy Dessert

Cooking Light has great recipes for Angel Food Cakes.  These cakes have no fat, making them a healthier dessert than most.  The nice thing about baking your own Angel Food cake is:

  1. They taste better
  2. You can add flavorings
  3. They cost pennies
  4. You can make it ahead of time and freeze it

This recipe  – Cafe’ au Lait Angel food has a coffee flavor and we love that!  Cafe’ au Lait means coffee with milk.  This recipe also has a custard-like sauce to serve with it,which gives the coffee flavor it’s “milk addition.  It takes regular old Angel Food to the next level, and certainly makes it company worthy!  Here’s the recipe:

Cafe’ au Lait Angel Food Cake

Ingredients

  • Cake:
  • 1 cup sifted cake flour – Don’t have any?  Try this – Take one level cup of AP flour, remove two tablespoons, and then add two tablespoons of cornstarch back in. Be sure to sift the flour to distribute the cornstarch well before using it in your cake batter.
  • 1 1/2 cups sugar, divided
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons instant espresso granules or 2 tablespoons instant coffee granules
  • 2 tablespoons hot water
  • 12 large egg whites
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons vanilla extract
  • Sauce:
  • 3 large egg yolks, lightly beaten
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 3 cups 2% reduced-fat milk, divided
  • 1 vanilla bean, split lengthwise
  • 3 tablespoons Frangelico (hazelnut-flavored liqueur) –  I didn’t use this or substitute
  • Remaining ingredient:
  • 1/2 cup chopped hazelnuts, toasted
  1. Preheat oven to 350°.

  2. To prepare cake, lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, 3/4 cup sugar, and cinnamon, stirring with a whisk, and set aside. Combine espresso and hot water, stirring until espresso dissolves; set aside.

  3. Place egg whites in a large bowl; beat with a mixer at high speed until foamy. Add cream of tartar and 1/4 teaspoon salt; beat until soft peaks form. Add 3/4 cup sugar, 2 tablespoons at a time, beating until stiff peaks form.

  4. Beat in espresso mixture and vanilla extract. Sift 1/4 cup flour mixture over egg white mixture; fold in. Repeat procedure with remaining flour mixture, 1/4 cup at a time.

  5. Spoon batter into an ungreased 10-inch tube pan, spreading evenly. Break air pockets by cutting through batter with a knife. Bake at 350° for 50 minutes or until cake springs back when lightly touched. Invert pan; cool completely. Loosen cake from sides of pan using a narrow metal spatula. Invert cake onto plate.

    I had to work just  a little to loosen my cake from the pan, but it did come out whole after a few little “tugs” with my metal spatula.

    I saw that eggs are on sale at Kroger this week for .79, so it’s a good time to make one of these cakes!  I’m going to attempt to upload a video  this Wednesday of how to make this cake.  You can see just how simple it really is!  It’s really fun to venture out a little a make something a little challenging.  I hope you’ll give this a try!  Plus it’s just fun to say – Cafe’ au Lait!

    Family Friday – Enjoy Today

    Whereas ye know not what shall be on the morrow. For what is your life? It is even a vapour, that appeareth for a little time, and then vanisheth away.

    Throwback Memories of My Weekend in the UP

    Yikes!  I haven’t stopped to share about my weekend in Sault Ste. Marie, Michigan almost two weeks ago!  Let’s fix that today!  I’ll share some of the highlights of that great time with some really special ladies!

    I went to Sault Ste. Marie, Michigan to speak for their “Ladies Day.”  Traveling and speaking is never anything I ever sought out to do.  The Lord has put this privilege before me, and I have loved it so much.  I always learn far more than anyone I speak to!  For that reason alone, I am so thankful to my God!  But I would never/ could never travel if I didn’t have the support, encouragement and prayers of my husband.  He cheers me on every step of the way.  The picture below was on our way to the airport when we stopped to have lunch before he dropped me off.  What a man I am blessed with!

    It’s all about the People!
    My friend, Kellie traveled with me and she was such a blessing.  It’s lots more fun navigating a trip with a friend at your side!

    Th next picture of the pretty blonde is the sweet young woman who invited me to her church.  Lisa was a member here at our church until she got married and her husband moved them waaaaay up north!  It was a joy beyond compare to be with her for the weekend, to see her church, her home and her heart for God!

    I met lots of precious women.  I won’t post them all here, but they were welcoming, open to God’s Word, and very friendly to this Tennessean!

    The decor
    The ladies used the white birch around them to help decorate the platform for their theme “Deeply Rooted.”  They had verses about being rooted in God’s Word all over – on the bulletin boards, in frames – everywhere.  They did a wonderful job carrying the theme throughout the whole church!

    The Fellowship
    Part of the blessing of a weekend like this was fellowship with other ladies.  Aside from our main sessions and workshops, we had times of sharing a meal, a dessert, and a game.  That’s when you really get to know others!  We had lots of fun together!  We played a game using our purses.  You know, it’s amazing what some people carry in theirs (that would be me!)

    The SNOW!!!
    There was plenty of snow all weekend!  They had a few flurries while I was there, but the piles have been there since December.  As we say in the south – Bless their hearts!  It sure was beautiful – but then I got to leave it after a weekend and come home to green grass!

    There’s nothing better than serving God!  Look where He takes me!  Look who allows me to meet!  Look at what He teaches me in His Word!  I never would have dreamed that I’d be so blessed, but isn’t that just like our God?  He surprises us over and over and over!

    FBC ladies, thank you for having me.  Thank you for being such a blessing to me.  I am the richer for it!

    A Telling Beauty Mark

    I confess, I enjoy watching make-up application videos.  It’s really enlightening (no pun intended!), and it’s also transforming in incredible ways!  The “before” and “after” pictures are pretty amazing!  The ladies doing the videos show how to apply, how to smudge, and how to make the most of every beauty mark on your face!  Their instructions tell you how to look your best.

    But as I was reading the book of John recently, I came to this verse and I thought this is the best description of a “beauty mark.”  It says,

    By this shall all men know that ye are my disciples,

    if ye have love one to another.

    This is the Lord’s instructions to us as to how to be the most attractive Christian. It’s wrapped up in one word in verb form – LOVE.

    When you’ve been hurt – LOVE.

    When you feel neglected – LOVE.

    When you’re misunderstood – LOVE.

    When you are mistreated – LOVE.

    When you don’t know what else to do – LOVE.

    Christ’s love, shown in His strength gives glory to Him, because we can’t love like that in our own flesh.  Think about all the places we could apply this beauty:

    • At home
    • At work
    • In the grocery store
    • In traffic!
    • In political situations
    • On Social media

    It might be easier to get up and head out the door without applying makeup, but it’s not very pretty, is it?  On a higher plane, we need to stop and take time to apply Christ’s love to every situation so that we represent our Savior well.

    Get in the Word – Learn of His love
    Pray – Ask for His love
    Go – Look for ways to demonstrate His love!

    Will you wear the beauty of His love today?  Who needs to see it most?
