Monday Marriage Matters Recap

As my husband and I approach our 35th anniversary, I’m realizing more and more how rare it is to have the word longevity attached to the word married.  The salon where I get a pedicure usually has young women working as the staff.  As I strike up conversation with them as they work, it seems that nearly every one of them has told me they came from a divorced home.  I realize that there are lots of reasons, and lots of stories, but it doesn’t change the fact that divorce is not God’s plan or idea for marriage.

Still, marriage is hard.  Marriage can have all kinds of difficult things to deal with, but marriage matters to God, and it must matter to those who believe and live out the Bible.  Someone has to make sure that communication happens.  It takes effort and intentional thought and planning to keep the marriage thriving!

It is for those reasons that I began the #Mondaymarriagematters photos on my Instagram.  I want to encourage women to post pictures of what they are doing to make the most of their marriage.  At the end of each month I do a recap of my pictures, and today it’s time for that review!

Here’s my month of pictures for Monday Marriage Matters:

  • One Sunday evening after church, we took our meal outside to the back porch where I had turned on the white lights.  We sat on the swing and ate our simple lunch.  Afterwards we watched an episode of Andy Griffith together while cuddling on the swing.  It was romantic, simple and gave us time to unwind after a busy day of ministry.
  • We’re loving our new patio area and fire pit.  We had a fire for two one night!
  • Yesterday provided the perfect weather for a bike ride on a bike path near us.  We only rode about 5-6 miles, but we enjoyed sitting on a bench for a while.  It gave us uninterrupted time to talk and catch up after a busy weekend.  We also read Scripture together (on my husband’s phone) and then we had a time of prayer.  Sigh…what a sweet leader he is!
  • Dollywood is open for the season and we took one of our Monday’s off and spent a few hours walking through the park.  Season passes there give us a great place to get away together for the day to a place we both love.  We don’t really ride many rides when it’s just the two of us, but when you have eachother, it’s fun, no matter!

A Spring Tea Menu

Noodle Salad

Happy Monday, friends!  I trust your weekend was fabulous!  I had a weekend of watching God at work! I can’t wait to tell you about it!  Thanks to those of you who prayed for me!  I’m so grateful!!

I promised I would share the recipes from the gathering here a week ago, so let’s start with one of the savory dishes!  When I was making my menu for my Spring Ladies’ Tea I knew I wanted some kind of salad that was refreshing, pretty and satisfying.  Then I saw Pioneer woman make an Asian Noodle salad on her show and knew I’d found what I needed!  The original recipe calls for spaghetti noodles, but I wanted to keep the menu to need a “fork only,” so I changed it to pasta shells and I was well satisfied.  This is so colorful, and it made a ton!  The leftovers were really good, too!  You could adjust the vegetables to your family’s liking, of course!

Here’s the recipe:

Ingredients
Salad:
8 ounces thin spaghetti
One 8-ounce bag julienne/fine-cut carrots (about 1 1/2 cups)
One 6-ounce bag baby sweet peppers, seeded and sliced thinly into rings (about 1 cup)
One 4-ounce bag bean sprouts (about 1 cup)
3 English cucumbers, peeled and sliced
3 scallions, sliced
Up to 1 bunch fresh cilantro, chopped
1/2 head or more napa cabbage, sliced
1/2 head or more purple cabbage, sliced
1/2 bunch kale, leaves torn off the stalks and shredded
2 cups peanuts, chopped
Dressing:
1/2 cup olive oil
1/3 cup low-sodium soy sauce
1/4 cup oyster sauce
1/4 cup rice wine vinegar
1/4 cup brown sugar
3 tablespoons chopped fresh ginger
2 tablespoons sesame oil
2 to 3 cloves garlic, chopped

P.S. I added a bottled Peanut Sauce to the salad for a little heat and we loved it!

For the salad: Bring a pot of water to a boil. Cook the spaghetti to al dente according to the package directions. Drain, rinse and let cool.
Mix together the cooked spaghetti, carrots, peppers, bean sprouts, cucumbers, scallions, cilantro, napa cabbage, purple cabbage and kale. Add the peanuts and toss together.
For the dressing: Whisk together the olive oil, soy sauce, oyster sauce, rice wine vinegar, brown sugar, ginger, sesame oil and garlic in a medium bowl.
Pour the dressing over the salad and mix together with tongs or your hands. If the salad seems a little dry, just mix up a little more of the wet ingredients of the dressing and throw it in. It’s a very organic process.
Transfer to a large platter and serve.

One of the desserts I served that seemed to be a favorite was Key Lime Tarts.  I wish I could say they were so complicated and I labored hours over them, but that is not true at all!  They were the easiest thing I made!

I made up my pie crust recipe – 2 Cups flour, 1 tsp salt, 3/4 Cup Crisco, ice water and cut out small circles and baked them in a mini tart pan.  (If you need a video tutorial on pie making here’s one I did several years ago) https://youtu.be/d3Wn-4bLdWI

I froze the shells early in the week then on the day of the Tea, I pulled them out and piped into each shell some Key Lime filling I purchased at an Amish Store nearby.  It was sooo flavorful and delicious!  Then, I whipped up fresh cream with a little powdered sugar added, and piped it onto the top of each tart.  I finished by zesting a lime and sprinkling the zest on top!  Yummy!

I failed to get a good picture of tea Tea punch I made, but it was refreshing and simple, so I need to share it with you!  The tea was in the punch bowl below!0416161318.jpg

Here’s the recipe:

Ingredients

3 family-size tea bags
2 cups loosely packed fresh mint leaves
1 (33.8-oz.) bottle peach nectar
1/2 (12-oz.) can frozen lemonade concentrate, thawed
1 (1-liter) bottle ginger ale, chilled
1 (1-liter) bottle club soda, chilled
Garnish: fresh peach wedges
Preparation
 Hands-on: 10 Minutes
Total: 9 Hours, 5 Minutes
1. Bring 4 cups water to a boil in a medium saucepan; add tea bags and mint leaves. Boil 1 minute; remove from heat. Cover and steep 10 minutes.

2. Discard tea bags and mint. Pour into a 1-gal. container; add peach nectar, lemonade concentrate, and Simple Sugar Syrup. Cover and chill 8 to 24 hours.
3. Pour chilled tea mixture into a punch bowl or pitcher. Stir in ginger ale and club soda just before serving. Garnish, if desired.

My menu also included Chicken Salad, Crackers, Cheese Straws, Chocolate Covered Strawberries and Honey Lemon Drop Cookies (here is my outcome of that recipe). 

Oh, I made sugar cookies shaped into tea cups…and promptly left them in the freezer!  Do you ever do that?!

Refresh Others

It’s easy to know what you could use to refresh yourself – a little quiet, a hot, soaking bath, a cup of coffee or glass of tea, a magazine full of great recipes, and on an on.  But have you considered what you could do to refresh someone else?

This week I realized it had been a long time since I’d made any Sour Dough bread, because we’re trying to steer clear of such delicious carbs.  But I was reminded that I have a couple of neighbors that might appreciate a loaf!  One of them loves homemade bread; the other had given us fresh eggs from his hens and I thought a loaf of fresh-baked bread might be a good thank you.  So, I quickly mixed up two loaves and let them rise.  One loaf has been delivered and the other is set out and ready to go next door after Bible club.  It wasn’t a whole lot of trouble!  I love to bake!  I had everything on hand to make the loaves.  I sent them with a longing to be a blessing, and to represent Christ – the Giver of every good and perfect gift.  How can I not share with others?!

Eliminating and Concentrating

You have so much to do today!  How will you ever accomplish everything that is before you ~ especially if you stop the first thing in your morning and spend thirty minutes alone with the Lord? There’s the housework, going to work, taking care of the children, cooking the meals, and so many other decisions to be made today!  You’d better get busy!

Wait! Consider this first:

  • Without having time with God our housework will be just cleaning up after others. When we do it after time with God, it’s our way of showing God’s love to those who live with us.
  • Without having time with God, going to do our jobs will be part of our daily grind.  When we do it after time with God, it’s a ministry to others.
  • Without having time with God, spending time with the children all day will be a display of gritting…

A Backyard Celebration

I told you last Friday that I had a fun activity planned for the weekend.  Today let me tell you about it!

Last fall a dear friend asked 31 ladies at our church to pray for me as I prepared to speak at The Wilds spring ladies’ retreat.  I had one lady praying specific verses and requests for me on each day of the month!  What an invaluable gift that has been!  I received a notebook with the names of each lady and what they were praying each day.  I was overwhelmed with the fact that they would invest in my life so richly!

As the ladies’ retreat approaches (it’s this weekend), I wanted to do something to express my thanks to this precious group of women, so I had a Spring Tea on our new patio area.  The Lord provided the perfect weather for the day – lots of sunshine (I think nearly everyone ended up with a sunburn though!), but the temps were so comfortable – in the high 70’s.  Only about half of the praying group were able to come, but we had a really great time together enjoying a light lunch, fellowship, and then a time of prayer.

Key Lime Tarts

I bought two bunches of flowers on sale at Kroger for $5 each and made an arrangement for each of the four tables.

See the sweet Scrabble coasters?  My talented friend, Vickie made those for me, and I thought they added a whimsical touch to each table!  I wanted her “there” somehow, and she was!  Thanks, Vickie!

I used my re-purposed coffee table for the beverages – a Peach Tea Punch, ice water and hot teas.

To say that I loved having everyone here would be a huge understatement!  This was my first official party on the new patio!  That was reason for rejoicing, but then to have these dear friends here who have prayed so much for me, I felt like that patio got the sweetest initiation ever!

To those of my prayers warriors who were not able to come, I missed you!  To those of you who have prayed for me, though you were not on the list of the 31 ladies, thank you!  I know I can do nothing, unless the Lord equip and fill my heart and my mouth.  Keep praying!  I need it so desperately.

I have cookies leftover, so stop in any time!  We’ll have our own tea party!
