It’s going to be in the 90’s here all week! Ice cream would be a good option every day, but in the desire to keep it healthier, I made some Strawberry Coconut Yogurt Popsicles. They are cold, fruity and just sweet enough for a hot summer day!
Blending everything in the food processor made them smooth snd creamy with a little texture due to the sweet coconut addition. .
Last week while I was visiting my parents, my mom mentioned that she wanted to make up a recipe she’d found for Strawberry Preserves that uses no pectin. It’s a cooked jam and then it’s sealed with wax for preservation. She had saved the Oui Yogurt jars that are the perfect size for jams. She had a good plan and was excited about executing it! My sister sent her some lovely berries that were so flavorful and fresh.
Oh, how I have loved having all the fresh tomatoes this summer! There are a few things I crave when I know a fresh tomato is in the house; one is a BLT on sour dough bread. I took care of that craving a couple weeks ago. Another yummy dish is a Kentucky Hot Brown. If you’ve never had one, think of it as a BLT with turkey slices and cheese sauce added. It is heavenly! As you can imagine, however, it is a little on the fattening side.
~Enter Cooking Light… They have a lightened up version of this yummy Kentucky favorite, and it’s just as good as the more fattening version. Okay, even if you don’t have fresh tomatoes lying around, go buy a tomato somewhere and make this for supper! I had roasted a turkey breast a couple weeks ago and stored slices in the freezer marked, “Turkey Breast slices for Hot Browns.” So, this recipe was in the back of my head for a few weeks!
Sauce:
1 1/2 tablespoons butter 2 tablespoons all-purpose flour 1/4 teaspoon salt 1/8 teaspoon paprika 1/8 teaspoon black pepper 1 cup 2% reduced-fat milk 1/2 cup (2 ounces) shredded reduced-fat extra sharp cheddar cheese 1/2 teaspoon Worcestershire sauce 1/8 teaspoon dry mustard
To prepare sauce, melt butter in a saucepan over medium heat; stir in flour, salt, paprika, and pepper. Cook the mixture 30 seconds, stirring constantly. Gradually add milk, stirring with a whisk. Cook 3 minutes or until thick, stirring constantly. Remove from heat. Add cheddar, Worcestershire, and mustard; stir with a whisk until smooth. Keep warm.
Arrange toast on a large baking sheet. Arrange turkey evenly over toast. Drizzle sauce evenly over turkey; top each toast slice with 1 tomato slice. Sprinkle evenly with bacon and Parmesan. Broil for 7 minutes or until thoroughly heated and lightly browned. Serve immediately.
Kentucky Hot Brown
If you need a couple recipe suggestions for fresh tomatoes, here’s a recipe using Cherry Tomatoes. This ravioli is so delicious! Of course you can’t beat a good ol’ Tomato Sandwich on white bread, spread with mayo and Cheddar cheese slice! What is your favorite way to eat fresh tomatoes?
One year I made a greeting card for my son-in-law’s birthday and wrote on the inside,
“May you live every day of your life.”
Some folks just don’t know how to do that. Do you? It simply means to get the most out of every day – to enjoy the moment! Do you know how to do that or do you merely slug your way through each week and each month of the year? Do you know how to seize the moment? My husband is so good at this and he helps make our days so enjoyable because of it!
If you’re not following what I’m talking about, here are a few examples ~
Take a nap when a rainstorm brews up
Stop for ice cream when you’re on your way home from church
Enjoy a free outdoor concert on Friday night instead of staying home to watch television
Make a run to get french fries – even though it’s after 10:00 pm!
A good way to give you some ideas for living every day is to look at what the National Days are and take your cue from them. This Thursday is July the 1st. Listed below are someNational Days for the month of July:
July 1 – National Creative Ice cream Flavors Day – You could whip up a batch of homemade ice cream and try a new flavor!
July 4 – Of course we know it’s Independence day but it’s also National Barbecue Ribs day! Don’t grill hamburgers!
July 6 – National Fried Chicken Day – Go out for your favorite version of fried chicken!
July 10 – National Kitten Day – If you’ve thought of adopting a kitten, today would be the day to jump on that! Or you could visit a pet store or just buy a special toy for your cat!
July 15 – National Cow Appreciation Day – You could:
Make chocolate milk for your children
Take them to Chick-Fil-A where cute cows pictures are everywhere!
Cook hamburgers or steaks out on the grill
July 17 – National Peach Ice Cream Day – You could:
Make your own homemade ice cream
Stop in and order your favorite flavors at an ice cream shop
Buy a half gallon and a box of cones at the grocery store and invite friends over
July 22 – National Hammock Day – Dig out the hammock and set it up in a shady spot!
My twin sister and her granddaughter know how to enjoy the hammock random style!
July 24th – National Tell an Old Joke Day – You could:
Take your children to the library and let them check out joke books. Let everyone find one to share at suppertime
July 24th is also – National Amelia Earhart Day – Why not go to the airport and watch planes take off and land?
July 29th – National Lasagna Day
July 30th – National Cheesecake Day
July 31st – National Father-in-law Day – Do something special for your father-in-law today! If nothing else, just give him a call and tell him you appreciate him!
So, go ahead and live today, Friend! The Lord gave you this day. Honor Him in all you do, and enjoy the day He made. The greatest joys are eternal ones, found in a personal relationship with Jesus Christ. Without Him all of life is simply vain. When we know Him we have fellowship with our Savior, times in His Word and prayer, Scripture memory, and fellowship with believers, to name just a few of the eternal joys!

With summertime comes light refreshing meals. I’m going to share a salad recipe that we LOVE. It calls for pears, which are really good in this, but blueberries, blackberries or strawberries are delicious additions; we’ve tried them all!. One great thing is that it only has 6.3 grams of fat. The dressing is so good, but made with only a small amount of oil. Try it and tell me what you think! This recipe came from Cooking Light
Pear, Walnut, and Blue Cheese Salad with Cranberry Vinaigrette
You can make and refrigerate the vinaigrette up to a week ahead.
Vinaigrette:
1/2 cup canned whole-berry cranberry sauce
3/4 cup orange juice (about one orange)
1 tablespoon olive oil
2 tablespoons balsamic vinegar
1 teaspoon sugar
1 teaspoon minced peeled fresh ginger (I didn’t have this and it was still good)
1/4 teaspoon salt
Salad:
Salad greens of your choice (anything but head lettuce is good)
2 Cups sliced peeled pear
1 cup slices red onion, sliced into rings
1/3 cup crumbled blue cheese
6 teaspoons coarsely chopped walnuts, toasted
1. To prepare vinaigrette, place first 7 ingredients in a medium bowl, stir well with a whisk.
2. To prepare salads, divide the lettuce evenly among 6 salad plates. Divide sliced pear and onions evenly among leaves. Top each serving with about 1 tablespoon cheese and 1 teaspoon walnuts. Drizzle each serving with about 2 1/2 tablespoons vinaigrette. Yield: 6 servings
