The Gift of Christmas 2020

The last of the laundry has been folded and put away. Beds are neatly made, bathrooms have been cleaned and the floors are swept and mopped, but still there is much that lingers in the corners of my home from our recent Family Christmas. The traces that are left from the past holiday will remain in the deepest part of my heart, I pray until the day I leave this world and enter the next. I share my memories with you now, more for my own heart to press each detail into my memory for its long-term preservation.

After this long year of severed plans, pandemic panic and so much isolation, I had held very lightly our family’s hopes for gathering together at Christmas. Proverbs reminds us that man’s goings are of the Lord. I know I can trust Him, whether what I plan comes to fruition or not. But we did make plans, and asked the Lord for His will to be done. In His grace and kindness, the Lord allowed our plans to not only come to pass, but also to surpass what we had ever imagined! Here’s how I saw that happen…

Everyone was well and able to come. No one was sick or quarantined! We were all well and able to gather together!

The Lord gave us a white Christmas that began after we were all together under our roof! The snow began to fall on Christmas Eve and left us with a few inches of fluffy snow that covered the hillsides and made the holiday so festive that even a Hallmark movie couldn’t have matched the setting (now that’s saying something!).

We created a new tradition and fun memory. The Lord brought an idea to my mind to have a cookie decorating contest. I wanted something that was easy enough for even my four-year old grandsons to participate in, so I baked snowflake-shaped cookies ahead of time, and then had the counter filled with colored icings, and a plethora of sprinkles. Everyone had been informed before they arrived what they would be given two cookies to decorate so they could gather an idea on Pinterest, or bring any aid with them, if they desired. Then in order to also include other family members in another state, we made a Facetime call to my mom so she could see the cookies on the counter and be our judge for first and second place winners! I had simple treat bags for each of the two winners. My younger daughter came in first place and my husband was second place! Everyone really put their heart into the creations and we had so much fun together!

We shared our traditional foods our family loves. I asked everyone what they felt like was important that we have for our meals on Christmas Eve and Christmas Day. I made sure those things were provided. We enjoyed yummy sweets, but also savory soups and sides.

We had a family sleep-over! Christmas Day continued to bring more snow, so even our local family decided to bring things so they could just pack it in at our house for the night! Pallets were made on the floor for the twins, a couch was utelized, as well as both the day bed and our guest room. The next morning as everyone arose, it was so sweet to sit near the fireplace in the living room, cups of steaming coffee warming our chilled bodies, while our sleepy eyes slowly took in the new day with dimmed lights and hushed voices.
Breakfast of French Toast was made for the whole family by my husband – the King of Breakfast! No one seemed in a hurry for the day to move forward; this was our last morning together and it was another gift from our Father’s kind hand.

Sweet moments of tenderness –
Gifts – Watching four-year old’s at Christmas is a gift in itself. They were so thankful and so excited!
My grandsons gave me an oven mitt with their hand prints on it. A card included the tearful reminder that their prints would last while their hands continued to grow up and one day move away.
I received a beautiful hand-painted picture of our house! This home is a grace gift from the Lord and such a gift, so this painting is a precious reminder of how God answered my ten year prayer!
Music – My daughters are both very musical, so Whitney played the piano and Alli played her violin so we could sing carols and hymns. How wonderful to enjoy this blessing, especially after missing church for so many weeks this year!
Conversations – One of my grandsons was asking about the baby Jesus and the grown up Jesus. I had the blessing of telling him how that Baby Jesus grew up, just like he was growing up. He loved us so much that He took the punishment for our sins on the cross. I could see him processing it all in his mind. Little light bulbs are coming on, and I’m so grateful for the opportunity to share the Gospel with him again!
One of the boys called, “Gigi, Gigi, come see! The sun is going to bed!” He took me by the hand to show me the sun setting over the hillside. Indeed, the sun was going to bed.
Chats at the table, prayers uttered as a family, Scriptures were read, hearts were shared…all these conversations are such a gift.

I’m reminded of the Scripture that says,

Which of you, if your son asks for bread, will give him a stone? 10 Or if he asks for a fish, will give him a snake? 11 If you, then, though you are evil, know how to give good gifts to your children, how much more will your Father in heaven give good gifts to those who ask him!

This Christmas, our Father gave us so many good gifts, and my heart is so full of thanks. I know many who were alone. Some are suffering. Some are grieving. I don’t deserve all that the Lord did for us this Christmas, that’s why they are grace gifts. I am thankful, and give praise to my loving Father for His lavish kindness that He poured out on us this Christmas of 2020.

Dealing With Christmas Leftovers

Wow, Christmas ham or turkey goes a lot farther than that one dinner, doesn’t it? You feed eight people and there’s enough ham left over for a week of meals, but who wants to eat repeats of that dinner over and over?

No one.

What to do? Here are a few suggestions for dealing with that leftover food in your fridge:

  • Ham
  • Place slices in small freezer bags and freeze to use for another supper meal in a couple weeks.
  • Make scalloped potatoes and ham.
  • Chop up ham and use in omelets
  • Mix cubed ham with shredded cheese. Place inside a rolled out canned biscuit. Fold over like a turnover and seal. Bake. Serve with honey for a delicious breakfast.
  • Turkey –
  • Make a cream gravy and add turkey. Serve over warm biscuits for supper
  • Turkey salad – Use this recipe for Chicken salad, substituting turkey. Here’s a version of Hot Chicken Salad that you could also use substitute with turkey.
  • Make a Turkey pot pie.

If you have leftover Green Bean Casserole or your creamed corn, you can freeze it! Place the vegetable in small Freezer bags, press flat and freeze as a flat package. It is easier to store in the freezer and also thaws quicker.

Leftover rolls – Use for a baked egg casserole, breakfast sandwich, filled with ham and an egg. They can also be frozen for a week or so.

Leftover cookies, cake or pie – Most all of these can be frozen beautifully, if packaged well. I place mine in tins, covering the inside with syran wrap. You could put ice cream between two sugar cookies and make it a specialty ice cream sandwich! Crumble cake layers for a Trifle. You could even mix pie pieces into plain ice cream for an awesome holiday flavor!

Use your leftover sprinkles as toppings for the sides of the Ice cream sandwich!

Cranberry – Make a salad dressing with it. This is Cranberry Vinaigrette is my favorite!

Make your own Frozen Dinner! Place the individual servings of the meat, potatoes, and veggies in a small disposable tin. Cover well with foil. Freeze. Pop into the oven for the best kind of “frozen dinner” ever!

You spent lots of time and money on that meal; utilize it; don’t toss it!

Christmas At My House

Happy week before Christmas! I’m posting pics of our house this year, albeit, my house is NOT the overdone, beautiful Christmas showcase. There are a couple reasons my decorations are minimal. First is because my husband and I took two weeks vacation in December. Therefore, we’ve been gone a good chunk of the month. Secondly, I’m really scaling back on my holiday decor, and instead am trying to simply decorate for the season as I explained here.

But I do love all the holiday things, and have tried to add a little pop here and there to make the home Christmas-cozy. I’m reminded that it’s more than just what you SEE. I’m hosting our family (Lord willing), so all the smells, sounds and warmth of the season will also be present when everyone gathers! I can’t wait!

Here’s a little tour of what I have done so far…

My kitchen is the hub of our home. The counter just has a runner with my tiered stand. I used my red and green Fiesta Ware cups for my salt pillar and measuring spoons. A little sprig of fresh greenery was tucked in the top. Oh, and baked goods like this sour dough Cinnamon Bread add to the fragrance of Christmas!

My living room coziness starts with this rug that feels like the softest blanket you’ll ever wrap up in! I adorned the mantle with fresh greenery from my yard. I hope to add my white lights there when we return from vacation!

The fireplace in our bedroom adds such a visual warmth. Liza enjoys it, too! My little Memory Tree is a special treasure and the perfect size for a bedroom. My sweet friend gave me this tree several years ago. Each ornament has a special memory written on it – the name of a loved one, a place we’ve gone, or a ministry we’ve served in. What a precious treasure the entire tree is!

Our “big tree” is back in our family room again this year, but in a different spot. I’m in the final stages of redoing this room and I can’t wait to reveal the whole project, but for now, here’s a little corner for you to see. My new rug has pops of bright pink and light blue, so I added those colors of ornaments to my tree and I love it!

You just can’t have Christmas pictures without a Christmas Cat! Liza has adorned our Christmas tree for 15 years. I think she approves of the new room and the location of the tree! The next picture also gives a better view of the colored ornaments I added to our HUGE collection of “special” ones we’ve been amassing through the years.

Our tree is a very full tree, but it’s appropriate because Christmas reminds us how full our lives can be. His Word tells us that in the “fullness of time” God sent His son, born of a woman, under the law to redeem us out of the law and to adopt us as His own. When we trust in Christ, we become a child of God! We have the rights and privileges of a full-grown son! Now that is a reason to celebrate!!

I pray your heart is even more full that all the decor in your house because you know the Christ of Christmas. If you don’t know Him personally, let me just say, He’s waiting for you with open arms.

Gingerbread Cake with Fresh Whipping Cream

Oh, the flavors of Christmas! Can we get enough? Surely gingerbread would be one smell and taste associated with Christmas baking. However, you don’t need to go to all the fuss of gingerbread houses or decorated gingerbread men to get that delicious, reminiscent flavor.

When I was growing up, we usually always had dessert with supper, and one treat I loved was Gingerbread Cake. I can still see the metal pan, filled with the gingery goodness. My mom would serve it topped with a dollop of whipping cream. Yum; it made the house smell so good, and it tasted even better.

I was glad to find a recipe from Cooking light for a Gingerbread cake that took me back to my childhood. This recipe has a Lemon Glaze to pour over it, if you wish. I’ve made that and love it, but for December, I’m sticking to whipping cream as the garnish! It only takes a few minutes to whip this together!

Gingerbread Cake
1/3 cup butter, cut into small pieces
2/3 cup hot water
1 cup light or dark molasses
1 large egg
2 3/4 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground cloves
 Cooking spray
Glaze
1 1/2 cups powdered sugar
6 tablespoons fresh lemon juice
1 cup frozen reduced-fat whipped topping, thawed
Ground cinnamon (optional)

Preparation

Preheat oven to 350°.

Combine butter and hot water in a large bowl, stirring with a whisk until the butter melts. Add molasses and egg, and stir with a whisk until blended. Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour, baking soda, ginger, cinnamon, salt, and cloves. Add flour mixture to the molasses mixture, stirring just until moist.

Spoon batter into a 9 x 9-inch cake pan coated with cooking spray. Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool gingerbread in the pan on a wire rack for 15 minutes.

For Glaze: Combine sugar and lemon juice, stirring until well blended. Pierce top of gingerbread liberally with a wooden skewer. Pour glaze over gingerbread. Cool completely.

Top each serving with the whipped topping. Sprinkle gingerbread with cinnamon and garnish with lemon slices, if desired.

I love serving this warm and then topping it with fresh whipping cream and a dusting of cinnamon. This would make a great weeknight dessert to serve to your family. Winter Vacation on the Scenic Route

Most people probably only think of a beach vacation when the temps make the thermometer and your face equally red. But I’ve learned in the last two December’s that being at the beach when it’s cooler is a blessing! My husband and I went to Hilton Head last December and loved it. Here are a few reasons I love the beach in the winter…

  • It is the perfect respite after a very busy fall season and before Christmas arrives.
  • It’s not sweltering!
  • It’s much more modest (see bullet above!)
  • You pretty much have the beach to yourselves!
  • The cities are quiet.
  • It’s so restful!

After our first winter beach trip, we decided that we needed to consider vacationing before Christmas again so we could enjoy all those benefits. That’s exactly where we’ve been this past week. Due to the cancellations caused by Covid this year, our plans were held very lightly in our hands. We knew only the Lord would keep us well and allow us the blessing of traveling to another state for vacation. What a gift this week has been!

If you have been following my blog for long, you know that one thing my husband and I enjoy doing as dates is traveling on the Scenic Route. We enjoy taking the side roads and stopping along the way to enjoy the sights that pique our interest. Yes, it takes longer, but we love making a memory while spending time together.

Here’s a little window into our Winter Vacation on the Scenic Route ~

We both loving walking/running on the beach. Though we don’t stay side by side, we stay in touch with one another and love that we share the love of outdoor exercise.
We try to catch the sunrise every morning. The blessing of winter sunrisew is that they’re a little later than summertime! This one came up at a little after 7:00, meaning we could sleep in a little!
We had so much fun one day when we got to have lunch with new friends that we met this fall. We spent several hours in fellowship with them and it was so refreshing and encouraging!
We love visiting churches when we are on vacation. The church we visited last Sunday had communion, giving us the blessing of sharing this time together. Since Dale is a pastor, we seldom get to share this ordinance side by side! It was sweet.

Our time away simply allowed us to be together…our favorite thing! We don’t need to be entertained, we just like being with one another. We may sit in the same room in silence as we each work on projects, but we’re okay with that because we’re together. We do spend time chatting about upcoming decisions, God’s Word, plans for the future and memories from the past.

We’ve created some new memories this week on our second winter beach vacation and we are grateful for each part on the Scenic Route!
