Fall/Winter Pantry Essentials

pantry.jpg

Last week I shared three of my Go-To meals when I’m in a pinch for time (and money!).  I also shared the items I keep stocked so those meals can happen.  I hope you’ll check out that post if you missed it.  But when it turns cooler my menu changes, as I bet yours does too.  We think about soups, stew, cobblers, and comfort foods to fill us when fall and winter approach.  Since I know those are the kinds of foods we’re going to want for supper, there are certain items I know I need to keep on hand.

Let me share some of the essential items I like to keep in my pantry so I can cook and bake at a moment’s notice.

  • Chicken stock or broth – I love to make my own stock after I’ve roasted a chicken.  You can find my method here.  I’ve even updated my method by putting all the ingredients in the crock pot and letting it simmer all day.  It’s so much easier than doing it on the stove!  I freeze my broth in Ziplock bags (double-bagged for fear of leakage), lay them flat and stack them so they don’t take up much room.
Chicken stock is necessary for soups, but also many other dishes – enchilada sauce, and roasted chicken, for example.  It’s great to have it on hand. This soup is a ten minute soup, and great for flu victims!
  • Minute Rice
  • Baking Mix (Like Bisquick).  This mix can quickly be turned into pancakes, waffles, biscuits, Cheddar Biscuits, muffins, dumplings and more!  Check out these recipes!
Here’s a homemade version  you can make and keep on hand:
    Homemade Baking Mix

    6 cups All-purpose flour
    3 tbl baking powder
    1 tbl salt
    1 cup shortening
Sift flour, baking powder and salt three times into a large bowl.  Cut in shortening with a pastry blender until mixture resembles fine crumbs.  Store mixture in airtight container in the refrigerator up to 4 months.
  • Canned Goods – Right now is a good time to stock up as many stores have sales events going on for the holidays.
    • Beans
    • Tomatoes
    • Corn
    • Green Beans
    • Pie fillings
    • Pumpkin
    • Cream Soups
    • Pasta sauce
  • Pasta
  • Taco SeasoningHere’s my homemade version
  • Olive oil
  • Vinegar – Balsamic, White, Apple Cider – I love making my own salad dressings and if I have a good olive oil and choices of vinegar, I can mix one up in a minute!
  • Sugars – White, Brown and Powdered
  • All-purpose Flour
  • Shortening
  • Baking chocolate – Cocoa and chocolate chips
  • Oatmeal
  • Cake Mixes – Again, I stock up three or four when they’re on sale and keep for the Quick Cakes or desserts.

Of course I keep potatoes, onions. fruits, etc., but I’m only mentioning the dry goods here on this list.

There were lots of years that I couldn’t stock up my pantry, but had to purchase only what I needed that week.  If you can only add one or two extra items a week as you shop, keep an eye out for the sales and grab them when they’re marked down.  It will truly save you in the long-run!

Did I miss an item that you try to keep in your pantry?  What is it?

What the Preacher’s Wife wore

When you open the weather app on your phone and this is what is says – how do you dress?!

screen-shot

Here’s what I try to do:

1019161347-1.jpg
Layers is the answer for me.  When it’s cool in the morning and evening I can leave on the top layer, when it warms up I can take off a layer. This outfit consisted of olive green jeans, a cotton blouse, leopard flats and a denim vest.

Dressier outfit:

Last year I found this winter white skirt at the Dillard’s outlet.  I love the versatility it gives me!  Here are two ways I’ve found to wear it.  The one on the right is another idea of layering.

Now, for a whole different kind of outfit… Brace yourself!

With Trick or Treat coming up, maybe you’re looking for a simple DIY costume?  Let me show you the funny ones my husband and I did last Wednesday for our church’s Trunk or Treat.  I was a Rain Cloud, he was a Nerd.  Oh, did he nail it or what? Yikes!

costumes 1.jpg

Along with my rain cloud hat, the picture below will show you that I also wore a black top and pants, with rain boots to complete the outfit.

I went to the Dollar Tree and bought

  • a child’s cowboy hat
  • four bags of cotton balls
  • Blue foam squares
  • Blue ribbon
  • Gray paint
  • You’ll also need a glue gun, which I already had.

costume-instructionsTake the cotton balls and kind of pull them out to fluff them up a bit, then begin gluing them to the hat to create the cloud.  Cover the hat, using more than one layer.  This takes a while, just be patient.

Then cut rain drop shapes from the foam, I did about 20.  Glue two together with the ribbon in-between.  Attach the ribbons to the hat.  I tried to stick it up on that hat, between the cotton balls so it would stick a little better.  I dabbed a little bit of acrylic gray paint on the white cotton balls.  You could also use gray spray paint to add a touch to your cloud.

That’s it!  This costume cost me under $10!

Do you ever dress up for Halloween?  It was fun to “join the party” and have fun with the kids at church!

What are you wearing during these cool/warm fall days?

Stay refreshed by going to a Bible preaching church this weekend!

Passing By Jesus

In the busy routine of our day, we pass by the local school, the library, the post office.  We pay no attention to the business going on there because we are headed somewhere else.

Yesterday I read Matthew 27 and was brought to think on verse 39:

And they that passed by reviled him, wagging their heads,

Jesus was being crucified on the cross.  He was suffering not only the pain of the crucifixion, but even greater – He was bearing the weight of every person’s sin – past, present and future. Yet, here were some in their daily routine going here or there.  They passed by Jesus and wagged their heads without even  stopping to consider Him.  In so doing, they were also bypassing their means to freedom from sin, death and hell.wp-1470168240102.jpg

What are you doing, today, my friend?  Are you so busy with your life that you haven’t stopped to take a long look at Jesus?  Will you just pass by Him, and wag your head because you don’t have time to consider His great love that sent Him to take your sin’s penalty by dying on a cruel cross?

For God so loved the world, that he gave his only begotten Son, that whosoever believeth in him should not perish, but have everlasting life. John 3:16

Eternity is just ahead for all of us. He died for you.  He lives now for each of us, too.  He lives to intercede for us, and He is coming soon!

Don’t just pass by Christ today…stop and consider Him. You can go here to understand why Christ died for guilty sinners like each of us!

Thankful for the cross,

Grilled Coconut Oil Tortillas

Our favorite ethnic food is Mexican!  Lunchtime is often just a tortilla shell stuffed with tomatoes, fresh veggies and a little sour cream.  If I have roasted chicken I’ll add that, too.  It’s simple.  It’s delicious and it’s fast and we LOVE it!

I’ve posted a video here where I showed the technique for making whole wheat tortillas, and they are really good, but I recently tried a new recipe for tortillas and a new technique.  The recipe uses coconut oil.  It made them very soft and added a little sweetness.  I also grilled them on the gas grill, since I don’t have a gas stove.  I loved how the grill charred them a little and gave them that little smokey flavor!

The most time-consuming part is grilling/cooking them, but I had a helper; Alli came over and we made them together.  It made it go quicker, and we had fun working together!

Soft Homemade Coconut Oil Tortillas

2 Cups Flour

1 tsp Sea salt

4 T. Coconut oil

3/4 Cup warm milk (or even water)

Instructions

  1. Mix flour and salt in a large bowl.
  2. Use fork or hands to mash coconut oil balls into the flour, keeping lumps small.
  3. Slowly add milk until mixture begins to form a ball.
  4. Knead 2 minutes
  5. Cover dough and allow to rest 20 minutes
  6. Divide into 8 balls, and press on tortilla press. Then roll each one as thin as possible in a circular shape using a rolling pin.
  7. Cook tortillas in pre-heated, medium-hot skillet ( or on a gas grill!) about 30 seconds per side-golden brown spots indicate when it’s ready to flip.
  8. Tortillas are best served immediately, but can be stored in fridge and reheated for a few seconds in skillet.

These made our Mexican lunch a fiesta!  They were so good!  I will be firing up the grill again to make another batch soon!

Whether you make these on the grill or the stove top, you need to try this recipe and have your own Mexican celebration!

This was a week of many blessings! Let me start with last weekend – our Ladies’ retreat…

160915_123244_collage-1.jpg

Carol Trahan was used of the Lord to give us Truth about the things God brings into our lives.  We may have a lament right now, but God will bring it to an end that will glorify Him!  We saw that in the lives of Leah, Hannah and Esther.  Such a joy.

Our church ladies worked so very hard to bring this retreat about!  There are too many tasks to name, but everything was done beautifully, and for God’s glory.  We had great food, good fellowship, wonderful workshops, and beautiful decorations.  It was just a fun weekend with other women around God’s Word!

Sunday brought a double birthday for me! My physical birthday is 9/11 and my spiritual birthday is also 9/11!  This year I celebrated 50 years of knowing Christ as my Savior; what a blessing!

160915_123442_collage-1.jpg

I got to celebrate with my family, minus Paul, Whitney’s husband.  We had a grilled steak dinner at home after church.  It was topped off with White Chocolate Raspberry cupcakes, made by a talented baker at church!  We had a sweet time at the patio table outside enjoying the meal, family time, and lots of laughs!

The picture of the French Toast and Bacon was my birhtday breakfast (tradition) delivered to me by my sweet husband.  French toast is his specialty!  Birthdays are big events in our family, as you can see!

The next picture is a screen shot I took of my parents as we chatted on Skype on my birthday.  I love them both dearly and am thankful we can “visit” using this means.  It almost feels like they were here!

The bottom right picture is my gift from my husband.  It has lots of special elements to it that make it really special to me.  He gave it to me and explained what drew him to this particular print.  I will always remember that sweet explanation when I look at it!  What a great reminder, too, not to be anxious about ANYTHING, but to let the peace of God rule in my heart.  (What are you anxious about today?  Pray and thank God so you can have His peace!)

Liza Jane makes every day better.  Here are some of her cute antics I captured this week:

160915_123519_collage-1.jpg

It doesn’t matter if she’s napping or snooping, she’s just cute!

This weekend brings another retreat for me – this one for pastor’s wives.  I need God’s help.  I cannot serve Him in my own strength.  I’d appreciate any/all prayers that the Lord will meet with us and encourage the hearts of these dear servants of His!

What was the highlight of your week?

Be refreshed,
