What’s Cookin’ in the Parsonage?

Years ago my family, including my young four year-old daughter, were invited to have dinner with a church family.  Our hostess served what I would call a “Sunday roast.”  By that I mean, it was a round roast that typically gets dry when cooked.  My innocent little one looked at me and said, “Mommy this is hard meat!”  I don’t remember how red my face got, or how I covered for my child’s honest (though blunt) summation of the meal, but not only was I afraid to ever take this child to another person’s home, I was also afraid to cook that kind of roast, for fear I would get the same results (which I usually did)!

 I recently found a Beef Bottom Round Roast on sale at Sam’s Club.  When I got it home, I knew I had to find a recipe that would help me get something less than “hard meat” from it!  I think I’ve found the answer!  The trick is in cooking it for a short period of time at a high temperature, then turning the oven off while the roast continues to cook in the closed oven!

Here is the result:
 
Cooked this way, the roast is a little pink in the middle and is juicy and delicious!
 
 
The outside made me wonder if it was going to be dry.  It looked like this:
 
But, it was perfect!
 
I cooked the roast on Saturday, then sliced it.  For our Sunday dinner, all I had to do was warm up the slices.  You could do this process on Sunday while you’re at church, but I wanted to be sure it would reach the correct internal temperature instead of coming home to a too-rare roast.  Here’s what you do:
 
 
Ingredients:
  • 1 (3 pound)beef eye of round roast
  • salt and pepper to taste
  • (I also added about 1/2  – 1 cup Beef Broth near the end of the cooking time – even though it says not to open the oven door!)

Directions

  1. Preheat the oven to 500 degrees F (260 degrees C). Season the roast with salt and pepper and place in a roasting pan or baking dish. Do not cover or add water.
  2. Place the roast in the preheated oven. Reduce the temperature to 475 degrees F (245 degrees C). Roast for 21 minutes (seven minutes per pound) then turn off the oven and let the roast sit in the hot oven for 2 1/2 hours. Do not open the door at all during this time!
  3. Remove the roast from the oven, the internal temperature should have reached at least 145 degrees F (65 degrees C).  (I had to leave my roast in about 20 more minutes) Carve into thin slices to serve.

Roasted Rosemary Potatoes
Fresh Beans
 
 
The salad was made  last week, but I had plenty left!  That’s what I love about frozen salads! 
 
Roasted Rosemary Potatoes for Sunday Dinner
The potatoes were a new “try” for Sunday dinner and worked great.  If you have an auto timer on your oven, you will love this.   Dice the potatoes into small cubes.  Drizzle with Olive Oil, chopped fresh rosemary, salt and pepper.  Place in oven and set timer for 25 minutes and oven temperature for 425 degrees.  It was great to come home and the potatoes be fully ready!
 
I’m looking forward this week to a Roast Beef Sandwich with the leftovers!

Freshen Up Friday

Accessorizing your wardrobe with belts and scarves can refresh clothing items you already own. 
 If you were at the retreat at BCBC last weekend, you heard about how
these two simple items can add so much to an outfit. 
But once you pick out the right color and size, what do you do with it?
Here are two ideas.  Let’s start with the belt.
 
Have you ever put a belt on and it looked like this?
 

It’s definitely not pretty to see the extra belt dangling like a
limp spaghetti noodle hanging off the side of the pan!
 
 
 
I recently saw an idea of what to do with those long belts…
 Isn’t that better? 
Now the extra piece looks like a part of the belt instead of an appendage!
Take the extra piece and place it below the belt and bring it up under it.
Tuck it into the loop.
 
 
Here’s a new way I learned to tie a scarf.  It’s easy peasy. 
(The top I have on did not need a scarf, but it’s what I was wearing when it was time to photograph the steps!)
Fold the scarf in half lengthwise and bring the ends around each side of your neck.
You’ll have a fold on one side and two loose ends on the other side.
 
 
 
 
Take ONE of the loose ends and place it through the fold.

Take the other hanging end and wrap it over, under and then up through the fold

Fluff!
Isn’t that a pretty fold?
 
 

It’s amazing how much a simple accessory can add to an otherwise bland outfit.  Find a belt or scarf you love and freshen up your wardrobe this weekend!

Thrifty Thursday: Grocery Shopping Strategies



Thrifty grocery shopping requires knowing when, where and how to buy the things you need. Here is my simple strategy for the when, where and how! 


Top 10 things I always purchase with coupons 


These are things I never buy without pairing a coupon and a sale. They are easy to get at a reasonable price, sometimes even FREE. =) 

  1. Cereal
  2. Salad dressing
  3. Pasta sauce
  4. Fruit snacks
  5. Juice
  6. Condiments: BBQ sauce, mustard, relish
  7. Campbells soup
  8. Dish detergent
  9. Toothpaste
  10. Laundry detergent/fabric softener
Using coupons with a sale, I got these boxes of cereal for $1.25 each!

Additionally, these are things that we use in larger quantities than other groceries. The key is to get coupons for things you buy often! If you need help finding coupons for something, let me know!


Top 5 things I buy at Aldi

These are things that I either cannot find coupons for, or that I need more often than I can afford to stock up when they are on sale. 

  1. Fresh Produce and Vegetables
  2. Juice – sometimes juice is just over $1 at Aldi, which is a great price. 
  3. Mexican food (tortillas, taco seasoning, nacho cheese)
  4. Cereal Bars/Granola Bars
  5. Soups for cooking (cream of mushroom, etc.)

If there is not an Aldi in your area, you may find that Sam’s, Costco or a place like SaveMore foods works well for your needs. Be careful though, sometimes things are much more expensive at “discount” stores. 

Top 5 things I can’t buy with coupons

Let’s face it – there are just some products for which you cannot find coupons! 

  1. Meat 
  2. Produce
  3. Bread
  4. Milk
  5. Ice cream! *Disclaimer – you CAN find coupons for ice cream, but I rarely use them. I do choose the brand that is the best deal, but still… my need for ice cream supersedes my need to be thrifty.
This doesn’t mean you throw caution to the wind when buying things that don’t have coupons! With the exception of meat, these are things that I can’t feasibly stock up on. I always buy meat on sale – never, ever pay full price for meat. Produce does follow a sales cycle – buy in season and you’re within the sales cycle.

A Peek Inside the Parsonage

Starry-eyed brides love every detail about their new husband.  His cute little ways of eating, the way he drinks his coffee in one swallow, the way he needs her to help him pick out his clothes, the pitiful way he pouts when she’s away – it’s all new and precious. 

Then life marches onto the scene – children come, trials pound on their front door, wrinkles are pressed into his forehead and her eyes, and the things that were once “precious” somehow become areas of irritation.  “Does he have to slurp his coffee?!”  “Can’t he do anything for himself, for heaven’s sake?”

Sad to say, it happens in the parsonage too.  I’ve recognized the ugly monster of criticism sitting at our breakfast table, whispering in my ears the irritants that went from my ear into my heart.  For many years now, I’ve realized the importance of asking God to give me a stronger love each day for my husband.  Oh, not that I ever didn’t love him-we have had a wonderful marriage…but I, too often, dwelt on the negatives instead of counting my blessings, which are far greater.

The Lord brought to my mind just recently that He’s answered that prayer of increasing my love for my parson through what I’m calling our “Vision Trial.”  The Lord allowed seeing his physical weakness to tender my heart in compassion.  Who cares about those silly little issues when sight or blindness are the two options before you?  You don’t bother with worrying about the aging process moving in a little too quickly when you’re just thankful you have today to sit together and sip your coffee.

The enemy wants to destroy our marriages.  Pray and ask the Lord to help you to love your husband more and more each day.  If we ask anything according to His will, he promises to hear us!  This is a prayer He will certainly answer!

It’s time to brag:  What do you love about your husband?  I love that my husband has a tender heart.

Retreat Notes

I sat down with my notes from our recent ladies’ retreat so I could be reminded of the truths I heard.  Here are some of the highlights that I learned (and was convicted of) from Carol Trahan’s teaching…

  • It’s absurd to give the God of heaven advice and not submission.

  • Every sin grows in a spirit of discontentment.

  • Through the greatest suffering the greatest love was shown.

  • The things that come into my life are Divinely permitted or Divinely prepared.

  • “Best” is anything that brings me to a greater dependence on Christ.

  • A woman walking in pride is prey for the enemy.

  • Dwell on Scripture until it changes you.

  • You want to know the will of God?  Be a thankful woman.

  • Motherhood brings out who we really are.

  • When I saturate my mind with Truth there is peace.

  • The answer to every struggle I face is, “I believe God.”

  • Suffering and glory are two partners that travel together.

  • When you see nothing happening, don’t lose hope.

  • Love  like God’s love can be trusted.

This was teaching that can change a woman’s life and outlook!
