Dressing Up Leftovers

Pork Sandwich 2a.jpg

When you have meat leftover at the end of a meal, if you’re like me, there’s a temptation to reheat it the next night and serve it in the same way you did the first time – same salad, same side dish.   Maybe there’s just a difficulty in getting creative with that meat!

Last week I had both pork tenderloin and grilled sirloin steak leftover.  I took those meats and made two completely different entree’s with them.  With a disguise like that, I wonder if my husband even knew he was eating leftovers…okay, he did, but they were so good, I know he didn’t mind!  Here’s what I made:

With my Brown sugar and Balsamic Glazed Pork tenderloin, I made Toasted Pork Sandwiches.  I added the pork and the glaze to a pan and heated it.  Then I toasted the bun – this makes it sooo good!  Spray the bread with cooking spray, then toast in a skillet until lightly browned.  It gives the bread great crunchy texture.

Then I piled meat, red onion and avocado slices on the bun.

It was so good!

The next leftover was the sirloin.  With it I made a Blue Sirloin Salad.

First I made up Pioneer Woman’s Blue Cheese Dressing.  Here’s my lightened up version:

Blue Cheese Dressing

Ingredients
1/2 cup light mayonnaise
1/4 cup 2% milk
1/4 cup lilght sour cream
Dash of Worcestershire sauce
1/3 cup blue cheese crumbles
Salt and pepper

Directions
To a bowl add the mayo, milk, sour cream and Worcestershire, and stir until combined. Stir in the blue cheese and add salt and pepper to taste.

On a plate I piled up Spring Mix greens, red onion, yellow peppers and tomatoes.  After warming the leftover sirloin, I sliced it and place it on top of the salad, then I topped the salad with the Blue Cheese Dressing.

Voila!  Dinner was served!

How good does that look?  It was refreshing and on the table in about 10 minutes!

How’s that for a makeover?  I wish I could get a personal one that quickly!

How do you makeover your meat leftovers?

Paper Napkin Fold/Arrangement

If you’re having a crowd for dinner and serving buffet style, here’s  a fun way to display paper napkins rather than stacking them in a pile!

Here’s a video tutorial:

I love to make even a simple meal pretty with small embellishments like this.  I love using my cloth napkins, but at an event that you want to make it a little more casual and use paper napkins, it can still be pretty!

These slipped out of the tea pots very easily.  I had the silverware in Ball mason jars -a tall  one for knives, then smaller ones for the forks and spoons.  I always place the silverware at the end of the buffet so guests don’t have to hold it while filling their plates.

That’s it for me!  Hope you have a great weekend!  We have a really, really special weekend ahead!  I’ll tell you all about it next week!

Stay refreshed,

Teaching Your Child To Work

What would you do if your child came to you and told you they felt they needed to be doing an hour to an hour and a half of chores during the summer months?  Feel their forehead for fever?  Gotcha!

A friend of mine told me recently that her daughter, did indeed say that to her!  The daughter had it all figured up that if she did 90 minutes of chores, she’d still have 6 hours of free time during the day!

I think sometimes the problems that summer can bring is due to too much time on a child’s hands.  They end up getting “bored,” or into trouble because they need a little more structure in their day.

Giving your child responsibilities will also lighten your load!  The chores they do will, of course, need to be overseen by you, but as they learn, then you can step back further and further.  Here are suggestions for young children:

Preschooler’s chores

  1. Pull the covers up on their bed and smooth it out.
  2. Wipe baseboards with a rag.
  3. Match socks
  4. Put toys into a bin
  5. Set the table
  6. Fold wash cloths
  7. Sweep small messes with a dustpan and brush
  8. Dust
  9. Water flowers with a watering can
  10. Empty small trash cans into larger one

Children 5-7

  1. Make the bed
  2. Feed pets
  3. Wipe the table after a meal
  4. Help prepare a meal or dessert
    1. Place pre-sliced Salad ingredients into bowl
    2. Make a sandwich
    3. Make toast
    4. Place cupcake liners in pan
    5. Help mix ingredients
  5. Fold their laundry – don’t expect perfection
  6. Pick up trash in car
  7. Carry items from the car to the house
  8. Pull weeds – show which ones are the weeds!
  9. Assist in putting away groceries
  10. Sort colors and whites in laundry piles

Children 8-10

  1. Clean the bathroom
  2. Load the dishwasher
  3. Unload the dishwasher
  4. Bring in the mail
  5. Sweep the porch/patio
  6. Fold laundry
  7. Use a vegetable peeler on carrots and potatoes
  8. Shake out rugs
  9. Measure ingredients for cookies or pancakes
  10. Make a simple lunch

10 – 12 Years old

  1. Mop floors
  2. Vacuum
  3. Wash car
  4. Cook dinner
  5. Iron
  6. Watch younger siblings
  7. Mow the grass

You’re doing your child a favor by teaching them to work around the house.  They need these skills, and will have learned in a very profitable way that

The desire accomplished is sweet to the soul!

Proverbs 13:19

After they’ve worked hard to clean the family room or bathroom, they might be a lot more protective of the other family members (themselves included) dropping piles on the coffee table, or leaving the bathroom a mess after bath time! Aaaand, they will be using their day productively with less time to let boredom set in on them!

Enjoy summer and help your child enjoy it, too, by teaching them to work wisely!

What other chores do you teach your children to do?

Teamwork

If you’ve followed my blog since last summer or before, you’ll know that one of the loves of my heart is the mentoring ministry, Apples of Gold.  It’s a fun means of mentoring  using cooking, teaching and fellowship.  We meet for six weeks, three hours each session.  I’ve had two full six week sessions in the last two summers, and it has been both a blessing and a blast!

I decided before our next session starts in July that I needed to have a reunion with the first two groups.  So, our first reunion was held this past Monday in my home.  I asked each lady to bring a dish to share and I provided the main dish of Pork Tenderloin with Brown Sugar Balsamic Glaze (one of my favorites of the recipes we made!).

We had quite a spread!  They brought salads, vegetables, rolls, and desserts and they were all so delicious! We enjoyed a great time of fellowship around the table as we ate our supper.

After the meal was over, I asked everyone to bring their chair to the dining room table.  Then we pulled out Jenga.  Are you familiar with it?  Little pieces of wood are all stacked up – one row going one direction, the next row going the other.  The object of the game is to pull or push out a piece and then set it on the top without knocking the stack over!

It gets very quiet when each player takes a turn.  We hardly breathed until the piece was safe and the tower of blocks still from its swaying.  And even though we were each competing against one another, there was a collective sigh and applause when the opponent was successful!

Jenga 1

There was even some coaching going on~

“No, don’t move that one, it has no support underneath!”

“You can do it!”

“Careful!  It’s shaking!”

One of the players would playfully say,

“I pass!”

She could see that it was risky and she wasn’t sure she wanted to be the one who caused the crash!  We cheered her on and kept her in the game, however!  And guess what?  She wasn’t the one who pulled the wrong piece out!  I did!  But it was fun and we laughed at even the ending of the game.

Following Jenga, I asked everyone to gather in the living room.  I shared with them that there was a method to the madness of us playing that game.  You see, the real reason I asked all those women over to my home in the first place was to try to encourage them to in their spiritual lives (okay, and I wanted that tasty meal!).  I wanted to challenge their hearts to have a strategy to keep them moving forward in their Christian walk.  I reminded them that, just as we cheered one another on in the game, the mentors and I were cheering them on!  We want to see them succeed in being a  godly woman for the glory of the Lord!  We don’t want to find one of them “dropping out” because the challenge is too great!

We ended by pairing off and praying together for the burdens on their hearts.  It was such a blessing to me.  They’ll never know what a joy it is to see them continuing on faithful and dedicated to growing in God’s Word, in prayer, and in serving our great God.

We all do better when we work as a team.  With whom are you accountable?  Who is cheering for you and challenging you?  If you don’t have someone, pray about it.  The Lord will bring an encourager along for you!  Whom are you encouraging?  Maybe it’s time to check in with them.  Teamwork is better than going it alone!

Two are better than one; because they have a good reward for their labour.
Ecclesiastes 4:9

Stay encouraged with the help of your team!

The Atmosphere of Eternity

road a

Last Sunday  as my husband began preaching from Revelation 8, the emphasis of the message dealt with living in the atmosphere of eternity.  I’m pretty sure we all had many points of conviction about being so busy we miss out on what is best.  He said If we do live in the atmosphere of eternity, life is simple(r).  Don’t we all long for that?!  I sure do!

As I pondered the message, here are my applications of what that kind of mindset will do for me ~

If I live for eternity every single day:

  • I’ll have a much easier time understanding what I should be doing each day.
  • I will lay aside that which would distract me.
  • I can say “no” to things (or requests) that are outside of what is most important.
  • I will prioritize people, rather than things.
  • I will let that which matters for eternity matter most to me.
  • I’ll be ready to serve the Lord.
  • I’ll be giving others the Gospel.
  • I’ll be becoming wiser in God’s Word.
  • I’ll be more in prayer.

Let that which will matter when we’re caught up matter most.

The great use of life is to spend it on something that will outlast us.

How are you living today in the atmosphere of eternity?

With love,
