(L)ovin’ Monday

Every Monday I’m showing you what’s been in my Oven that I’m lovin’!  Ready?

This was Thanksgiving Dinner at my mom’s last Thursday at 1:00.  Don’t you wish every day’s lunch looked like this…

Ha, well, maybe not that  much food, but tell me, is it just me, or do others find lunch a difficulty?  I’m usually well into a busy day and just need a quick bite to eat, but I find it hard to stop my day and fix something that’s tasty and quick.

As a matter of fact, even breakfast poses problems.  I’m not ready to eat when I first get up, and by the time I’m ready for a bite, it’s too late to want to get into any big cooking ordeal to accomplish what I need to give me energy for the rest of the morning!

Recently I prepared these Make-Ahead Omelets and froze them.  I made tiny ones for the shower I hosted.  I took the leftovers and froze them in a plastic container, putting sheets of waxed paper in between the rows of omelets.

Then I popped a frozen muffin into the microwave and it made the perfect breakfast!  In a matter of about 4 minutes everything was hot and ready to eat.  That’s better than instant oatmeal – and a lot tastier!

Then another help came for lunch.  I had made Sloppy Joe’s for our meal after Sunday night church, and had plenty left over.  Wrapping them individually in waxed paper, I warmed them at about 80% power for about 45 seconds.

It dawned on me then – why don’t I make up something like this at the beginning of each week and have it prepared in the fridge?  Lunch could be less than a minute away each day!  If you take your lunch to work, it would be so easy to have it packed and ready in the morning before you head out the door.

I’ve come up with a few ideas of things that would be made ahead and ready.  Here’s my starter list:

Breakfast:

Omelets

Waffles

Baked  Oatmeal

Lunch:

Sloppy Joes

Broccoli Soup

Salad in a jar – Like this one (I haven’t made this particular recipe, but I made one similar and they are great do-ahead salads!)

Chicken Salad – Ready for sandwiches, or to eat alone.

I hope this encourages you to prepare ahead for your busy mornings and lunchtimes.  When you’re heading into Christmas, why not take away a little stress by having some nutritious breakfasts and lunches all ready to serve?

Come, Thankful People!

dining room a.jpgThe lyrics below are from a very old hymn, Come Ye Thankful People, Come.  As I read through the words, they rang true in my heart.  Will you take a minute on this day of giving thanks, and read them and consider the truth they hold?

Come, ye thankful people, come,
raise the song of harvest home;
all is safely gathered in,
ere the winter storms begin.
God our Maker doth provide
for our wants to be supplied;
come to God’s own temple, come,
raise the song of harvest home.

Even so, Lord, quickly come,
bring thy final harvest home;
gather thou thy people in,
free from sorrow, free from sin,
there, forever purified,
in thy presence to abide;
come, with all thine angels, come,
raise the glorious harvest home.

Won’t that final harvest be a glorious one?  Even so come quickly, Lord Jesus!

Holiday Muffins At the Top of the Baking List

This is a repost of a recipe shared last year. This would be a wonderful muffin to have Thanksgiving morning and I wanted to remind you of its goodness!

Baking is like many things – you have to stick to it and keep trying after you have a fail. Giving up because you’ve had a flop will keep you from making progress, and even learning lessons along the way. You’re seeing this recipe today after three previous attempts to post! It’s been frustrating, but hopefully someone will be really glad to have this recipe, or will be refreshed by the encouragement not to give up!

Since tomorrow is December the first (what?!), I thought I would share a holiday muffin recipe as my first recipe of the season. I made some Cranberry Streusel Muffins for Thanksgiving breakfast last week. It was a new recipe to me and I couldn’t wait to try them!  These were the perfect blend of tart and sweet. What’s Inside my OCC Box?

I have heard for many years about the boxes sent to children at Christmas time, but never knew how I could get involved.  However, this year my church provided all the information, as well as the boxes, so that we could join in on this great outreach.

I learned that you can choose the gender and the age range of the child for whom you send a box.  I chose a girl between 5-9 and I had so much fun purchasing items to fill our box to the brim!  I thought you might enjoy seeing what we put in our box.

  3. Personal items –
    1. Hello Kitty Toothbrush with cover
    2. Toothpaste
    3. Combs
    4. Head bands and pony tail bands
  4. Fun item – Coloring book and crayons
  5. Sun glasses
  6. Holiday erasers
  7. Kleenexes

Now that I know what they allow and don’t allow, I can purchase items throughout the year and be a little more prepared next Christmas.  The boxes are being collected this coming Sunday.  I understand that Hobby Lobby is also participating in this.  You may still be able to purchase a clear box from them if you can’t get your hands on a OCC provided box.

The best thing about these boxes is that each child will hear the Gospel and then have an opportunity for follow-up discipleship classes.  It’s not just a good deed – it’s a chance to share the Good News!  There’s no better gift than that!

Fall/Winter Pantry Essentials

Last week I shared three of my Go-To meals when I’m in a pinch for time (and money!).  I also shared the items I keep stocked so those meals can happen.  I hope you’ll check out that post if you missed it.  But when it turns cooler my menu changes, as I bet yours does too.  We think about soups, stew, cobblers, and comfort foods to fill us when fall and winter approach.  Since I know those are the kinds of foods we’re going to want for supper, there are certain items I know I need to keep on hand.

Let me share some of the essential items I like to keep in my pantry so I can cook and bake at a moment’s notice.

  • Chicken stock or broth – I love to make my own stock after I’ve roasted a chicken.  You can find my method here.  I’ve even updated my method by putting all the ingredients in the crock pot and letting it simmer all day.  It’s so much easier than doing it on the stove!  I freeze my broth in Ziplock bags (double-bagged for fear of leakage), lay them flat and stack them so they don’t take up much room.
    Chicken stock is necessary for soups, but also many other dishes – enchilada sauce, and roasted chicken, for example.  It’s great to have it on hand. This soup is a ten minute soup, and great for flu victims!
  • Minute Rice
  • Baking Mix (Like Bisquick).  This mix can quickly be turned into pancakes, waffles, biscuits, Cheddar Biscuits, muffins, dumplings and more!  Check out these recipes!
    Here’s a homemade version  you can make and keep on hand:
    Homemade Baking Mix

    6 cups All-purpose flour
    3 tbl baking powder
    1 tbl salt
    1 cup shortening
    Sift flour, baking powder and salt three times into a large bowl.  Cut in shortening with a pastry blender until mixture resembles fine crumbs.  Store mixture in airtight container in the refrigerator up to 4 months.
  • Canned Goods – Right now is a good time to stock up as many stores have sales events going on for the holidays.
    • Beans
    • Tomatoes
    • Corn
    • Green Beans
    • Pie fillings
    • Pumpkin
    • Cream Soups
    • Pasta sauce
  • Pasta
  • Taco SeasoningHere’s my homemade version
  • Olive oil
  • Vinegar – Balsamic, White, Apple Cider – I love making my own salad dressings and if I have a good olive oil and choices of vinegar, I can mix one up in a minute!
  • Sugars – White, Brown and Powdered
  • All-purpose Flour
  • Shortening
  • Baking chocolate – Cocoa and chocolate chips
  • Oatmeal
  • Cake Mixes – Again, I stock up three or four when they’re on sale and keep for the Quick Cakes or desserts.

Of course I keep potatoes, onions. fruits, etc., but I’m only mentioning the dry goods here on this list.

There were lots of years that I couldn’t stock up my pantry, but had to purchase only what I needed that week.  If you can only add one or two extra items a week as you shop, keep an eye out for the sales and grab them when they’re marked down.  It will truly save you in the long-run!
