My Simple Christmas Home Decor

Christmas mantle 1.jpg

Welcome!  Today I’m inviting you to step inside and take a tour of my Christmas decor.  I’ve really taken the “simple” route with this part of my Christmas.  I do have touches of Christmas throughout my home, but it’s definitely not done in “Biltmore Style!”  A little here and a little there is pretty much what you’ll see.

With no further ado, come on inside!

The bench in my foyer is decorated with a fur muff and wool scarf.  The basket beneath is full of gloves and ear muffs.  They’re easy to grab on the way out the door!

Our tree is upstairs in our family room and can be seen from the street as it stands in a front window.

The dining area – The red chargers and napkins along with my $3 Target Dollar Spot runner add all the Christmas I needed!  I drew a Christmas tree on my chalkboard, using the words to a favorite carol.

One guest room –

This room is the perfect color scheme for Christmas decor!

In my sewing/guest room I added old photos and some Christmas greetings on the bulletin board over my work table.

These little Pinterest inspired snow globes add a tiny touch of winter to the guest room. The sweater cover for the vase was also inspired by Pinterest.  Old sweaters are great craft supplies!

In my laundry room I added a new calendar that I received as a Christmas gift (I love 13 -month calendars!), along with a light-up snowman.  He makes a great night light!

I love adding small touches of Christmas throughout my house.  I enjoy the lights, the softness and the warmth the decorations bring.  Many of the things I’ve added are items that can be left up through January.  When the outside is cold and bare, I can still have the warmth of the lights, throws, textures and candles.

It would be such a waste for us to spend so much time decorating and then never invite friends, neighbors or needy people in.  This is probably the easiest time of the year to entertain because our homes are probably the most decorated and lovely than at any other time of the year!  But isn’t it easy to feel overwhelmed and too tired?  It’s easier to tuck in and forget that others could feel loved and really blessed to be invited into our home.  I’ve had some folks in already, and have a neighborhood party planned in the next week, and honestly, though it can be tiring, it’s such a blessing!  Let’s open our hearts and our homes and share the warmth of not only our decor, but the love of our Savior, whose birth we are celebrating!!

How are you planning to use your decorated home to share the love of Christ?

Thanks for stopping in for a visit!

Easy Entertaining Menu

coffee-pie-1

Entertaining at any season can be overwhelming, but especially so at Christmas, right?  I came up with an entertaining menu that can be made completely ahead of time and simply warmed up when ready to serve.  This is a Mexican Food feast that is delicious and stress-free!  Talk about simplifying things – this will do just that when you invite folks over!

Spiced Pork Tenderloin with Avocado Salsa

Spanish Rice

Refried Beans

Coffee Pie

spiced-pork

Spiced Pork Tenderloin Tacos

  • 1 pork tenderloin (about 4 pounds)
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cinnamon
  • 2 tablespoons extra-virgin olive

Preheat the oven to 375°. Set the tenderloin on a large rimmed baking sheet. In a small bowl, mix the smoked paprika with the cumin, garlic powder, oregano and cinnamon. Rub the pork with the olive oil and season with salt and pepper. Sprinkle the spice mixture all over the pork. Roast the tenderloin until an instant-read thermometer inserted into the centers registers 145°. Transfer the tenderloins to a cutting board and let rest for 10 minutes. Using two forks, shred the tenderloin for tacos.

Salsa Ingredients

  • 1/2 small red onion, cut into 1/4-inch dice
  • 2 tablespoons red wine vinegar
  • 1 medium tomato, cut into 1/2-inch dice
  • 1 Hass avocado, cut into 1/2-inch dice
  • 1 teaspoon minced chipotle in adobo
  • 1/2 teaspoon chopped fresh oregano
  • 3 tablespoons extra-virgin olive oil
  • Kosher salt
  • Freshly ground pepper
  • Warm tortillas, for serving

For Salsa:

In a medium bowl, mix the onion with the red wine vinegar and let stand for 10 minutes. Add the tomato, avocado, chipotle, oregano and olive oil, season with salt and pepper and toss gently. Fill warm tortillas with the sliced pork, top with the salsa and serve.

spanishrice

The Spanish Rice is every bit as easy as a boxed brand but even tastier!  You may already have every ingredient in your pantry for this recipe!

Spanish Rice

Directions:

  1. Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
  2. Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

refried-beans

Refried beans are not the most beautiful dish to photograph, but when they’re made from scratch, they are a beautiful thing! This recipe is so delicious.  Here’s how I made mine using the crock pot to simplify the recipe:

Refried Beans
(I halved the recipe and it made plenty for 6-8)

6 cups dried pinto beans
4 slices thick-cut bacon, cut into 1-inch slices (or you can use salt pork, ham hock or diced ham instead)
1 tablespoon chili powder
1 teaspoon salt, plus more if needed
2 teaspoons black pepper, plus more if needed
1/2 stick butter
1 onion, diced
2 cups grated sharp Cheddar
Sliced jarred jalapenos

Put beans in a pot of water and let sit overnight.  In the morning, cook beans at medium-high temp until boiling.  Add 2 tsp baking soda.  Cook for 2 minutes. (This releases the gases in the beans and will keep tummies from feeling like they’ve eaten beans!)  Drain off water, rinse and place beans and bacon in a crock pot with enough water to cover.  Cover and cook on high for 3 hours.  Simmer butter and cook onion until tender.  Add the beans and liquid into a cast iron skillet, along with seasonings.  Cook until the sauce thickens and beans are tender.  Mash with potato masher until some beans still remain whole.  Serve with Cheddar cheese and Jalapenos.

Coffee Pie

1 Cup Water
1 tlb instant coffee granules
30 Large marshmallows
1/2 Cup walnuts
1 cup Whipping Cream
Cool Whip
Chopped Coffee Beans or Mini Chocolate Chips
Baked pie Shell

Bake Pie shell.  Let cool.
In a medium sauce pan, boil water.  Add coffee granules and marshmallows, stirring constantly until melted.  Let cool completely.

Whip the whipping cream.  Fold into cooled coffee mixture.  Pour into bake pie shell.  Cover and refrigerate 8 hours or overnight.

Cover with Cool Whip and Coffee beans or Chocolate chips.  Serve (with coffee!)

Take the stress out of entertaining and make a menu like this one that can all be prepared ahead of time!  My guests enjoyed it, and if you invite people that love Mexican food, they’ll be really glad you invited them over!

Happy entertaining!

Simplifying Christmas Prep in the Kitchen

christmas-kitchen-1

The kitchen is a busy place in most homes during Christmas. In order to keep it fun and not a drudgery, I’ve come up with six ways to simplify your work, so you can still be (L)oven your kitchen by the time December 25th arrives!

  1. Get dinner in the crock pot first thing in the morning  on a day when you know you’re going to be doing a marathon baking event.   That way you won’t have to stop your progress to fix a meal.  It will also keep your oven free for those cookies!
  2. Get any cookie dough that has to be refrigerated into the fridge on one day, and then bake the cookies the next day.  If you do all the mixing on one day and the rolling and baking on the next you won’t be as worn out!
  3. When you have a few extra minutes, fill a Ziploc bag with the dry ingredients for the cookies, sweet breads, or muffins you’re going to bake in the near future.   Label the bag.  Then on the day when you mix up the dough, you’ll simply have to pour and stir!  You’ve created your own baking mix!!
  4. Keep hot, soapy water in the kitchen sink.  As you work, put your baking utensils in the water.  Wash them up when the dough is complete, or the cookies are in the oven.  The kitchen will be clean when you’re finished and you can turn off the light and go take a hot bath!
  5. Enlist in help!  If you have children, let them put the sprinkles on, crush the candy canes, or chop the nuts (with a hand chopper).
You could also invite some friends (or your grown daughters/daughters-in-law) over and have each one bring the ingredients for a cookie recipe.  Work together on one recipe at a time.  You won’t believe how fast the work goes!  Divide the spoil between each of you when you’re finished.
  6. Make some treats that require NO BAKING – (like these Chocolate Peanut butter stacks that we LOOOOVE.  Recipe below)
There are many other No-Bake options –

    1. Peppermint Bark Oreos
    2. Graham Cracker Houses
    3. Santa Hat Cheesecake Bites

If you haven’t had these and you’re a chocolate and peanut butter fan, trust me when I say that you need these in your life!!

Chocolate Peanut Butter Stacks

Ingredients:
Ritz crackers
Peanut butter
Chocolate bark

Instructions:
Spread crackers with peanut butter, top with another cracker.  Dip crackers into melted chocolate bark.I melt my chocolate in the microwave, stirring every 30 seconds until completely melted.  Set cookies on waxed paper until chocolate hardens.

By simplifying things in the kitchen, you’re also staying refreshed during a busy time of the year!

Happy baking,

How to Stop Wifely Christmas Grumbles

wp-1481141126475.png

In a favorite episode of Andy Griffith, Aunt Bea goes out of town for a few days.  While she’s away, Andy and Opie TRASH the house while living their bachelor days in her absence.  When Andy tries to make Opie understand that their mess might be upsetting to Aunt Bea, Opie recalls the words he’s heard his great aunt say, and  what he thought she might say when she returns to find the disaster –

Land sakes alive!  Look at this mess; just look at it!  If it weren’t for me, this house wouldn’t be fit to live in!

Most wives can probably relate in some way to that scenario.  We dust, shine, mop, vacuum, and pick up – only to have to do it all again after the family has “lived” in it for a day!

But then we add into our busy worlds one word – HOLIDAYS -and we find ourselves with even more responsibilities than Dollywood has Christmas lights!  It can be really easy to fall into the “Aunt Bea” mode and mumble under our breath and complain about the holiday tasks that fall into our already full laps.

Our mumbling might include statements like:

I have to shop for the gifts, purchase the gifts and wrap them.

If I don’t schedule a time for our annual Christmas card picture, it never would happen!  Then I have to address the cards, seal them. and get them to the Post office.

I have eight different kinds of cookies to bake because everyone will expect them, and of course no one helps make them or clean up the mess, but they sure are there to eat them!

Then, of course, I have to buy the gifts and wrap the gifts!

If I left the tree decorating to my family it never would get done either!

Let’s face it – the whole Christmas celebration is up to me and I’m about worn out!!!!

It’s about that time that you can hear, instead of words, the honking sound, like Snoopy’s teacher:

No one wants to listen because of the terrible “sqwaking” that’s coming from our lips.

How do I know?

I’ve been there.

I’ve sqwaked.”

I’ve complained.

I was wrong.

Okay, so much of the doing of Christmas is up to us as the female in the home, but the attitude and heart with which it is done can make it either sweet or spoiled. How might we spoil it?

  1. Negative talk about our husband.  This is simply wrong.  He is the head of the home and is to be honored. Eph 5:33  Would we rather take on that responsibility?  I wouldn’t!  That’s a load every single day – not just at Christmas.  Let’s let our husband lead, and let’s you and I help make him the best leader by lending a hand with all our feminine ways.  That includes:
  • Planning
  • Cooking
  • Baking
  • Purchasing
  • Decorating
  • Wrapping

2.  Not doing our work to glorify God.  I Cor. 10:31  If we work ourselves to death and do it with a wrong attitude we shouldn’t be expected to be rewarded in heaven.  We got our reward – everyone’s pity (and maybe their distance from us, too!).  Let’s do all we do as unto the Lord.  Oh, that we would make our efforts like the precious gifts brought to the Christ child by the wise kings!

3.  Having an ungrateful heart.  A thankful spirit will be grateful for the:

  • Family we have to serve – I know some wives who have gone to heaven this past year.  Their families will be missing them this Christmas.  You and I are here; let’s make our families glad!
  • Health with which we can serve – This can be taken in an instant.  Be thankful you can walk, work, and think!
  • Provision for the cards, gifts and foods to prepare – Everything we have is a gift from God, and we have far more than most!
  • Reason we are celebrating!!!  Don’t lose the focus of this celebration; it’s all about Christ!

Maybe we need to do as I suggested yesterday and simplify our Christmas; make it a little easier on ourselves!  Our families would probably be fine with a little less decor, baked goods and gifts if it would mean we are sweeter and more fun to be near!

Have you been muttering under your breath?  Ask God to forgive you, then when you get up off your knees, ask your family’s forgiveness, too.  Start the day over with

  1. No more husband bashing,
  2. Work that glorifies God.
  3. A thankful heart.

Watch and  see what a difference it will make in your Christmas preparations!

Who’s with me?
